Pears

Postby herbidacious » Sat Sep 25, 2021 12:31 am

I picked a big bag's worth of pears in my garden in France. Not sure if they were ready, but I think so.
So... any favourite pear recipe suggestions?

Of course they might be perry pears... (it being Normandy). They are quite large.

Pears poached in red wine. Tarte aux poires : pear and almond tart. Faves.
If cooking or poaching them they're best slightly under ripe.

This pear and almond cake, a Hugh Fearnley-Whittinstall recipe, which doesn't rely on having ripe pears:

If they were really ready - ripe - they'd be juicy and fragile and ready to devour with juice dripping down your chin so it sounds as though maybe they're great cooking pears.

Always good pushed into chocolate sponge as a pudding.
One of my favourite salads- pear, blue cheese and walnut with lettuce. Even better with a little creamy dressing and candied walnuts if you can get/make them.
There are several recipes online for pear, blue cheese, and walnut tart. Walnuts its can be added to the pastry too. Different recipes use different things to bulk it out (potatoes, kale etc), I think you could choose your own!

Poached or stewed to have with cream or at breakfast are nice too.

Well they are not really ripe, but you don't leave pears to ripen on the tree, I think? Hopefully they will be really ripe. One is on its way so I can eat that one to see what they are like. I don't have a massive quantity. I think someone had already liberated most of them (and the apples). Which I suppose it fair enough. Why let them go to waste?
This is the first time I have ever picked any, and we have had the place for 14 years, but I think this is the first time we have been there mid-September.

There is a tiny apple in here too:

I very much like the idea of pear and almond tart, and the cake too. I think I will manage at least two things from this lot? They are very heavy. Pity I am supposed to be going on a diet. Maybe the week after next...

They look like Doyenne de comice rather than a conference type. They make wonderful eaters when ripe. I'd makea blue cheese tart, pour a glass of port and enjoy.

They look lovely Herbi!

Pear and walnut chutney is nice if you have any left over after making the cake and tart. :yum Here's a recipe I've used in the past:

Agree, Comice type

Perry pears, like cider apples, are small and slightly bitter iirc

Ooh thanks all. I suppose they were in the garden rather than the field, so more likely to be eaters. I couldn't go in the field - where there is a tree (there were more, but farmer cut them down for some reason - with our permission) because there were sheep in it :o (Scary sheep that stroke the ground with their hooves like bulls, but also didn't want to scare them. I should have gone in, shouldn't I...)

We had one like this in the garden from before the war. They would ripen late and were wonderful poached in red wine. We always made a few jars for winter and for cakes. :wino

I hosted Christmas a few years ago and made this pud for vegan nephew.
He loved it.

Dried pears and bottled pears are great.

Correct that pears are not usually nor best left on the tree to ripen but ready to be picked when fruit detaches easily and then allowed to ripen i.e. get juicy off the tree.

Pears look a lot like Williams.

That soup sounds very interesting SG. Care to share/expand? :D

You'll have to keep us up with your soups on the soup thread :thumbsup It probably needs reviving now anyway as we'll all be eating more soup and less salad

I had a lovely strawberry soup (with dumplings) as a sweetish starter in Budapest a few years ago.
