That sounds very good, it’s quite like something else I make, but while e I try not to be greedy, I aubergine and 3 potatoes for 6 portions sounds like quite small plates

yes, quite small portions if it's a main. i know we're greedy but it just did the two of us - i'm assuming it is possibly meant to be a side to a main dish. a 'restaurant' portion!
i sort of 'extended' it, too. as the aubergine was quite a large one i used a pack of alexandra new potatoes rather than the three, large, waxy potatoes suggested, two smaller medium sized red onions and rather than the faf of charring the pepper i used some of the jarred, charred peppers plus half an ordinary one - and a little less red wine vinegar to make up for the rinsed jarred ones. i also didn't skin etc the tomatoes - does anyone, really?

I made Twice Cooked Swiss Chard from Fuchsia Dunlop’s Every Grain of Rice

Easy, vegan, really good, recommended to anyone, but especially if you chard has grown to the point where it’s mostly tough stalks, as you can correct this in the trimming and blanching

Well, can't recommend it highly enough! Absolutely delicious :yum :yum

Meant to say, my sweet potatoes were long and I cut them into 1 cm discs. I think the chunks she suggests in her recipe are a bit too large.

Made the sunshine salad myself last night, subbed the basil for Oregano, the rocket for just cooked green beans, and added a pinch of chilli flakes to the potatoes and the dressing. Delicious.

the oven went on for half an hour this afternoon - a couple of trays of brownies (bea harling's from one of the hotel chocolat books - my favourite recipe) and some savoury cheese flapjacks based on this recipe.
i was trying to recreate the cheese flapjacks we often had at school, for lunch (hot with gravy) - really, scrummy.
my changes were the addition of a teaspoon of marmite, a finely sliced onion, a quarter tsp of garlic powder and about half a teaspoon of dried rosemary.

the only changes i'd make for the next batch would be to remove the eggs and replace them with more cheese. i think then they would more closely resemble my 'memory' ones - a bit more chewy and more cheesy.

good picnic or hike food.

I've wanted a recipe like that for a while. I suppose the egg holds them together in a way that cheese might not but more cheese and less egg sounds good. Not sure about the gravy!

oh, it was good, marmite-y gravy. it went well when they were hot.

pretty sure the cheese (i used extra mature cheddar) holds them together, too.
the egg made them feel a more 'cake-y' texture than the remembered ones.

Popping in to say it was very tasty - could have been a bit wetter but couldn't fault the flavour :thumbsup

ETA I didn't weigh the peas - I think it's probably very forgiving. If anything, I will have done more than less, though. Also we used bought preserved lemons I brought with us from the local Arab shop at home.

It was really delicious and much better than the sum of its parts. We had it with herby cous cous and some good sausages, but the sausages were superfluous really.
