Tried this salmon dish from the Tesco website yesterday. https://realfood.tesco.com/recipes/crea ... rosti.html It was very good though needed a bit more mustard than the recipe stated for our taste. We had it with broccoli, green beans, sugar snap peas and air fried sweet potato chips rather than the rosti and peas.

I baked something new the other day ... monkfish.

I already had some in the freezer (rtc), but the other Sunday went to a local Nepalese restaurant called Monk (just a coincidence ;) ) I saw monkfish on the menu cooked in a coconut curry sauce. I was sublime :yum :yum :yum - the meat literally melting in the mouth ...(needless to say the weekend man wouldn't try it :roll: )

Anyway, I defrosted my monkfish tail and baked it on a bed of veg. Never having cooked it before I may have over-baked as it seemed a bit tough (I have in the past eaten monkfish in a restaurant when it was decidedly under-cooked - almost raw)

I was a bit disappointed that it didn't have the same melt-in-the-mouth texture I was hoping for so only ate half

Yesterday I decided to try to re-create the dish from Monk using a recipe found online for a coconut curry sauce, then simmering the left-over fish meat and ........succeeded :bounce: :yum :clap I have just finished off the fish with basmati and red rice :thumbsup

Tried this orzo dish last night https://realfood.tesco.com/recipes/green-orzotto.html though using savoy cabbage and parmesan rather than greens & parmesan. I really liked it but DS2 was less enthused, a tad too cabbagey for him. Mind you it didn't stop him wolfing a huge bowlful. I halved the recipe and it made loads. Two dinner portions and there's enough leftover for lunch.

Tried this chicken & chorizo traybake yesterday https://www.bbc.co.uk/food/recipes/roas ... with_13305 , definitely a keeper full of flavour and very easy to put together. I halved the amount of chicken but followed the rest of the recipe. There's lovely roast veg/beans leftover for lunch.

Looks good, ltc. Quite surprised at the nutritional info (sugars, fat, carbs, calories). Can you get mild chorizo? I've only bought it twice and found it overpowering for my (wimpish) taste.

Not sure about mild chorizo EM but it wasn't a spicy one I used just part of a standard ring from Tesco https://www.tesco.com/groceries/en-GB/p ... /296814552 . There's not masses in the dish compared to the amount of veg so it gave it a nice background flavour rather than dominating. I'm sure salami or even just some sweet paprika would also work okay. Tbh I hadn't really looked at the nutritional info.

I wouldn't have once, I just have to now and sometimes it's a surprise (not wrong or anything!). I must give chorizo another go.

I find the Lidl ring chorizo quite mild, but the point of cooking with chorizo is surely to get the fat which flavours everything else. so I guess you could replace it with a smidge of olive oil, garlic & smoked paprika

Most of the sugar will come from the the veg - tomatoes, onions, peppers- won't it?

Yes, I thought that the tomatoes were probably the main sugar component. Was just interested to see the breakdown. Will be investigating chorizo further. Adding oil etc as you suggest would be flavoursome but I want to find out about chorizo as when I read numerous recipes that call for it I can't think it is the same as I have tried.

There are essentially 2 types of Spanish chorizo - a dried slicing sausage which can be used as it is, like salami (the Lidl one used to be labelled "chorizo-salami" but I think no longer is) and the smaller sausages which must be cooked, like bangers or bratwurst and are often served hot dog style

Confusingly both are used in cooking, and UK repipe writers seldom specify which is required

Never met one I didn't like, apart from very tough casings on some of the "bangers"

Brindisa do both a mild and a spicy cooking chorizo, I buy the mini spicy ones, they are fairly punchy, confusingly one or two of these are sliced, but they are quite squidgy, not like salami and I think are that's probably the kind to use like lardons

They also do the salami kind for eating as is, they call it "cured chorizo" which makes sense, the Alejandro is lovely, and widely available

Interesting Sue, it never crossed my mind that it might be cooking chorizo that the recipe called for as you say UK recipes don't always say which one. That said the salami type stuff worked well and softened nicely in the pan in this dish.

I picked up some Wicked vegan kievs in the RTC section in Tesco.
Chucked them in the oven tonight and served them with a mixed salad.

Not recommended.
