That's interesting Moira. I'd like to try it too.
"Each fish is then thoroughly rinsed, dried in the sun for a day and fermented for one more year in cooked rice before it is ready to be eaten". This suggests freshly cooked rice but all further mention, as the whole thing ferments further is of the 'fermented' rice. I'm quite interested in the process of what happens to the rice as well as the fish. Presumably liquid from the fish aids the fermentation of the rice.
