Cottage cheese ideas

The stupid supermarket delivery has brought us cottage cheese instead of cream cheese. I use cream cheese a lot for making pates and other savouries.

Cottage cheese isn't so versatile- I remember it from my twenties when everyone was 'slimming' and had it for lunch.

What can we do with it apart from cheese and pineapple on crackers :vomit

Mix with prawns in avocado? It's just so bland, isn't it?
Mix with tinned mackerel for pate or maybe a chunky egg mayo?

About a thousand years ago I sometimes made a cottage cheese and parsley flan.
Happy to dig the recipe out if it might float your boat.

Yes I used to use it in a flan ... I think it came from a Dairy Council or MMB recipe book.

Delia suggest it as sub for ricotta, in the not yet terribly international '80s... so spinach and cottage cheese cannelloni etc.

In my wholefood cafe days, two of the flans/quiches we made contained cottage cheese. One had the cheese mixed with a little sauteed onion and sweetcorn and then the usual eggs and milk/cream* and the other was a mix of blue cheese and cottage cheese with the usual egg etc.
*Both were very good, especially the blue cheese, but you had to go easy on the liquid with the corn one as it produced liquid whilst cooking.

One person used to use it instead of bechamel for a veggie lasagne but I can't say I was keen.

I recall once making a wholemeal flour flan case, then filling it with CCheese and prawns ... You might need to add an egg to help it set ... and/or add oats to the pastry for more taste too

The only thing I can remember cooking is Slimming World Crustless Quiche. There are various versions online.

It’s not bad at all actually. Otherwise it’s OK mixed with chives and done as a topping for jacket potatoes. I usually drain it first though.

I like the pineapple one straight from the tub. M&S do a rather good one with prawns too.

I was thinking of the crust less quiche - it’s really a cross between a quiche filling and frittata and you can riff on it

Love cottage cheese.
My go to snack is ryvita, marmite and cottage cheese. (back in the 80's, it was a slimming dish that you grilled - don't do it! )

I just eat out of the tub with a spoon, especially the pineapple variety. I love it but not so keen on it with salad’s etc.

I'm going to try the frittata idea(s) as it will do nicely as a quick lunch (we prefer our main meal in the evening).

I made this with artichokes, red peppers, red onion, mushrooms with a mix of cottage cheese and eggs on top. As an experiment I cooked it on the hob, in a lidded frying pan. It wasn't as firm as an omelette and broke up on removal, but it tasted very good.

Yes, both the peppers and artichokes were in jars. We have these and jarred mushrooms as antipasti and/or a quick topping for our pizzas.
