Easy pudding

This is from Nigella Express.

Take two ramekins and divide a sliced banana between them. Mix yogurt with double cream and a slosh of rum. Pour this over sliced bananas. Top with a tablespoon of dark muscovado sugar on each ramekin. Pop in fridge and leave overnight.

I did this last night and we ate the puds tonight. Very sophisticated and delicious. Something I'd do again, and felt worth passing on to others. :yum

Gosh, how easy! Thank you. Rather a lot of sugar each but that, along with the rum must be what makes it special.

I misread the recipe and used a teaspoon of sugar - it was sharp as a pudding but we enjoyed it. Moral of story: you don't need to use the full recipe tablespoon of sugar to enjoy the pud.

That sounds great, Binky (apart from the rum, I'd sub it). As Asda delivered 2 ltrs of yogurt instead of the one I ordered, we have a surfeit of yogurt and were wondering how best to use it up!

Double cream and a dollop of yogurt left overnight = diy creme fraiche. :D

We used to make a similar hot pud. Fruit (we liked peaches and apricots), cream/yoghurt, sugar, leave overnight, and just before serving, grill until the sugar is hot and bubbling.

I’ve made this before and agree it’s very good . Nigella is always pretty good for me in terms of reliability , plus I like the usual simplicity of her food compared to others .

Crumbled meringue nests (Tesco’s finest are good) with cream , tinned cherries and grated dark chocolate is a nice quick one and I like griddled wedges of pineapple with rum , lime and mint sugar . Mojito in fruit form really

Amy, that's good to know. I need to eat pineapple regularly for its enzymes and plain pineapple is a bit boring. Having it as a griddled pud will be a welcome change.

Another easy pudding - Nigella's instant chocolate mousse made with marshmallows instead of eggs.

Melt chocolate, marshmallows, and butter in hot water. Whip up some double cream and add to cooled mixture. Pour into ramekins. I added crushed Crunchie bar too.

They look absolutely delicious!

And I think easy to poshen up for a dinner party, using eg orange zest, orange juice and orange liqueur.

OH was dubious about the puds, having seen what I was assembling in the kitchen. However, he pronounced his ramekin excellent and ate every last bit. I left half of mine as it was so rich.

And Amber is correct, it's something you can tart up with a liqueur or other flavouring. I used a few leftover sections of Chocolate Orange as we didn't have quite the right amount of milk chocolate.

I'm planning to use some Camp coffee in my next attempts.....

Nigella's chocolate mousse and James Martin Lemon Posset are my two favourite easy go to puddings and are always a success :thumbsup :thumbsup :thumbsup

Binky, I’ve even got a set of the Royal Worcester ramekins like yours to put the pudding in right now. They are so pretty and I can’t imagine how long I’ve had them.
