Cake recipe help....please.

These are the ingredients for a Michael Barry chocolate cake, which is my favourite choc cake so far. I'd like to use it as a basis for other, non-chocolate cakes as I like the texture. So, I'm thinking of leaving out the cocoa powder and substituting with the equivalent of extra S/R flour. Would I therefore leave out the bicarbonate of soda and baking powder, as S/R flour contains these already, or do you think some would be needed and if so how much?

150 grams self-raising flour
1 teaspoon bicarbonate of soda
4 tablespoons cocoa powder
1 teaspoon baking powder
100 grams caster sugar
1 tablespoon black treacle (or golden syrup)
150 millilitres sunflower oil
150 millilitres milk
2 large eggs

Michael Barry was my first TV chef crush when I was fairly young.

I'd use both baking powder and b of soda.
In fact, my last cake used both, including self raising flour and it was as light as a feather. Worked fantastically well.

I'd use plain flour instead of cocoa, and follow the rest of the recipe, the first time. If the cakes rise quickly and then sink before baking is finished, or dome too much in the middle, then cut out the bicarbonate of soda - I think it's used to counteract the acidity of cocoa.

Let us know how (if) it works! I think the recipe (which is also one of my favourites for a chocolate sponge cake) is geared towards the chocolate element. I'm not sure how well it would work without cocoa. Add some vanilla for flavour.

I'm thinking either vanilla or, more probably, coffee.

I want to make a mocha cake. Either coffee cake & chocolate buttercream or chocolate cake & coffee buttercream. Will give both iterations a try and see which I prefer - this is assuming the cake(s) is a success!
