Jerk Chicken - so SMOKED PAPRIKA

Ingredients In Jamaican Jerk Seasoning
Aromatics – Powdered onion and garlic.
Spices – Cumin, nutmeg, allspice, smoked paprika, cinnamon.
Heat – Red pepper flakes and cayenne pepper.
Sugar – Just some brown sugar for a well rounded depth of flavor.
Seasoning – Salt and pepper.
Herbs – Dried parsley and thyme.

We understand that it is a popular dish in St Lucia

Keeping things Caribbean ...

my SSIL's lovely mum's recipe for Antiguan Pepper Pot has smoked paprika and smoked HAM HOCK (with lots of veg, Scotch bonnets and green split peas)

Although the weather is warm in the Carrib. Moving to Hungary....This was a recipe we had in Budapest https://www.thespruceeats.com/hungarian ... 1136678.... So Navy Beans which are actually Haricot beans but I did not know this...

Navy Beans are small, oval-shaped beans with white skin. They have a mild, delicate flavor. These are the beans used for the famous Boston Baked Beans. These white beans were named Navy Beans because of their inclusion in the U.S. Naval diet during the second half of the 19th Century.

Haricots aka navy beans in a pork, chorizo, tomato stew with green olives etc.

You'd be hard pressed to find any caribbean country that doesn't have jerk chicken/fish in abundance....... :D

just don't stand still too long or you'll be jerked.....!

true!
this is the sauce recipe i use - pretty damn close to the one i'd eaten in jamaica (i think it may have come from the 'spruce eats' website) - no smoked paprika in the one we had in jamaica.

1/2 cup ground allspice berries
1/2 cup packed brown sugar
6 to 8 garlic cloves
4 to 6 Scotch bonnet peppers, seeded and cored (wear gloves!)
1 Tablespoon ground thyme or 2 Tablespoons thyme leaves
2 bunches escallions (green onions)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Kosher salt and black pepper to taste
2 Tablespoons soy sauce to moisten

whizz up in a blender - keeps for a very looooong time in the fridge.

big green olives, stuffed with an appropriate stuffing of your choice, coated with breadcrumbs and fried.

Breadcrumbs, onions, milk, bay leaf, butter and CLOVES in bread sauce to go with our roast chicken.
