Re: What's everyone cooking this week? 2
Husband cooked me/us mussels in Ouzo for supper the other evening. It was absolutely delicious. I did not interfere at all !! The only suggestion was use shallots instead of onions. I think it was a good idea. There is a bowl of 'liquor' left which will be for lunch with some tiger bread.
Supper tomorrow is a venison casserole, only I have sneaked some cut up lamb kidneys into it together with some smoked bacon and some rose coco beans. I shall serve it with the German 'teatowel' dumpling I think.
I have two pieces of RTC salmon marinating in some tandoori mix in the fridge. It is my favourite way of eating salmon. Not keen on it 'plain' it tastes like a freshly dug over veg plot.....

Not sure why plain salmon might taste like a veg plot Zosh but the marinade sounds delicious. My favourite way to cook salmon is simply wrapped in foil with butter & lemon then baked for 15 or so minutes.
I loved our sausages and curry sauce last night. Not proper currywurst but very tasty. Leftovers for lunch today.

After a couple of freezer rake nights, yesterday I cooked spare ribs from the butchers. They were superb.
I slow roasted them in some bottled peri peri sauce and we had them with baked spuds, corn cobette and a flat mushroom.

after hunting through a couple of books to find something new to make i realised that what i fancied (i didn't consult 'him indoors') was (veg) stew and dumplings. it hit the spot for both of us.

J had a streaming cold last week and I have been feeling a bit under the weather for a couple of days.
I was hungry but didn't know what I wanted, so I left him in charge and was presented with a toasted English muffin with scrambled egg and mushrooms.
Feeling much better now.

Sounds lovely WW
Roast lamb for us last night (just a small piece of rolled leg) with roasties, veg and gravy. It was lovely. DS2 is cooking a chicken curry of some description for us this evening.

Have somehow managed to accumulate 3 heads of fennel so I'm wondering whether to make this tonight https://neon-raptor-online-shop.myshopi ... pyre-disco the braised fennel and celeriac thing from Simon Hopkinson
Re: What's everyone cooking this week? 2
No the fennel can wait, just found a few courgettes and peppers that need using first, will have to have a re-think
Re: What's everyone cooking this week? 2
That looks lovely LTC. We are actually having lamb this evening - but lamb steaks. I'm planning to have them with roasted veg (roasted by Sainsburys as our oven is still broken )
Last night I marinated pork mince in lemongrass, ginger and chilli and cooked up up with lots of veg. Very nice!

I made a sausage casserole yesterday, Waitrose chorizo style bangers, an onion, a big stick of celery, two small Romano peppers, garlic, smoked and sweet paprika, the tail end of a jar of plain tomato sauce, a squirt of tomato purée, a shot of dry sherry, cooked butter beans
Good one, I haven't found a sausage and pulse combo that doesn't work so far, next one will be a rerun of the classic Toulouse and Puy lentil, or I might go to the Italian butcher and get some nice sausages from there

I love a sausage and pulse combination such a good pairing. This uses mince but I've always thought it would work well with sausage meat. https://www.theguardian.com/food/2018/s ... clams-tart

I made this lasagne today
https://www.theguardian.com/food/2021/o ... ta-lasagne
I wasn't sure, as I dislike large quantities of spinach and feared this might be overkill on the chard.
I did a half portion and we ate half of it tonight.
The recipe was really easy.
I hesitated before adding the water but it wasn't too wet in the end.
It looked better than it tasted, but it tasted much better than I expected.
J loved it and devoured his portion.
I served it with garlic bread and some coleslaw that needed using up.
It went surprisingly well.

I like the sound of that lasagne. It reminds me of gill the painters swiss chard and portobello mushroom lasagne which I've made a few times.
We've been at Center Parcs and then the lake district. I had a really nice duck confit with pommes anna and a cherry sauce in a Cafe Rouge. Gorgeous food at the Punch Bowl in Crosthwaite as per usual. Cheese souffle, a roasted vegetable pithiver and chocolate parfait with hazelnuts.
We're all craving fruit and veg after the excesses of the last 5 days so I need to do a food shop. We might have a stir fry or a soup tonight.

Lasagne sounds good WW, good top hear it turned out well.
Sounds like a nice break OMCO.
Yesterday made a Chicken Rezala from the The Curry Guy Bible, it was very good.
Tonight it's bangers and mash with Cumberland ring sausages. DS2 has requested baked beans instead of gravy.

A simple one tonight
Breaded haddock with HM wedges and a mixed salad.
One of our favourites.

Made Ottolenghi's Pakora Pancakes last night for dinner. https://www.theguardian.com/food/2021/o ... egg-whites I was sort of hoping for the deliciousness of pakora with fewer calories. They were quick and easy to make and were really good, but next time I'd add more spice. We had them dolloped with dal rather than the avocado.

Kacey, that does look good, but a bit lacking in spice, just turmeric and ginger and a bit of black pepper
Edit: also, why olive oil? Not very S Asian, looks more knee jerk than necessary or even desirable
Also one to bear in mind as a way to use up egg whites without making meringues

I added half a tsp of chilli powder and would do the same again but I think a bit of garam masala should have gone in too.
Actually used a liberal spray of Frylight, no point in saving the calories from deep frying if you're going to use oil to fry each pancake, but then I was using an almost brand new non stick frying pan.
Oh and I cut the egg whites to 3 rather than 5. So not too many tweaks then!

It does look good and there is garlic but I can see it might need something else. Was it very egg whiteish ( if you know what I mean!)?
