I'm trying to run down the freezers for Christmas. Can't believe I only bought my second one last summer and its packed . I made burgers for GD last night as there was a pack of 4 butcher's beef burgers to use. I have two left to eat tonight and a lot of sprouts to eat up. Trying to think of something imaginative to do with them but think I would like them as a meat and two veg thing - other veg is available and there is a little jelly hiding under the huge amount of fat which came from the meat which I can use for gravy.

Lovely sounding meals OMCO.
I do love a burger in gravy, when I was growing up we used to have these fairly often on a Saturday and my Mum called them Salisbury steaks.

I love the idea of burgers with gravy.I love anything with gravy.
On Thursday we had lunch out and I had a steak and ale pie with chips and gravy. It was my birthday and we had intended to have scallops followed by ribeye steaks but we didn’t fancy it after a big lunch so had cauliflower cheese. Yesterday we were out for lunch again and I had a lovely warm halloumi salad. We had the steaks for dinner with bacon and leek risotto.
So scallops this evening with - something!

My most memorable meal ever was quite simple. Scallops with linguine in a creamy garlic sauce. I don't know what they did but it was fabulous.

Love the sound of the scallops dish EM I can often get small "Queenie" scallops which work really well in pasta dishes. For pasta I usually cook them in a buttery diced tomato & garlic sauce.

Last night I ended up shelving the meal plan and opting for a sloppy bowl of pure comfort - mash with cream of tomato soup poured over it and topped with grated cheese. The mash & soup were homemade from the freezer so no prep needed. It was just what I needed.
Today DS1 & DIL-to-be came for lunch. I made chicken, chickpea and chorizo stew and a crunchy salad. They brought some very good bread from a bakery near where they live. Just a snack needed this evening.

EM - we didn’t have the scallops last night but I like the sound of that pasta. Might think about that for tonight! We ended up having fish pie which I find very easy to throw together.

Total cheat meal tonight of a salmon encroute from Aldi , with Mediterranean roast veg and roast potatoes done in the airfryer

Tonight was aubergine parmigiana, I used to spend hours making nice neat layers like a bought lasagne, this was more chunky and rustic and all the better for it. Three portions put aside for the future.

Yesterday I cooked some mushrooms, shallot, fillet steak trimmings in a (packet mix) peppercorn sauce and had it with tagliatelle. The trimmings were from a piece I bought for beef wellington last New Year. It was really good and there's leftovers for lunch today. Tonight I'm going have the remaining peppercorn sauce with some of the venison meatballs I made a couple of weeks ago, mash and veg.

Lunch today was Sainsbury’s beer battered haddock goujons in thick buttered bread with mayo, a squeeze of lemon and black pepper. These goujons are the best fish fingers and we’ve tried a few.
Dinner was chicken satay skewers with noodles, stir fried veg, crushed peanuts, cucumber ribbons and lime wedges.

A very simple 10-minute dinner tonight.
I softened spring onion and garlic in olive oil, whilst tagliatelle was cooking with a handful of peas.
I drained the pasta, added the onions and garlic and stirred through some snipped smoked salmon and a spoonful of creme fraiche.

EM - inspired by you we had scallop linguine last night - quite simple cooked bacon, the diced scallop tails (if that is what they are called!) and garlic in olive oil, added some white wine and parsley and tossed through the pasta with the seared scallops on top. Delicious

It will be a 'Surprise Supper' Rocky!
We had, if not a surprise, a slight change of plan yesterday. I was going to make a version of Coq au Vin, then found we’d run out of red wine. Shock Horror. However, there was plenty of white, so I used that instead. Very nice it was, too. Theoretically I had done enough for two meals, but when we’d finished there was barely one portion left. I blame it on the gravy, this often happens when we have a casserole.

Well the surprise is..... beef and Guinness stew. OH will have it with rice and I will have it with mash. I'm hungry - the pie I took for lunch was off so I only had the side salad I'd made!

The scallops sound good, Rocky - as does the stew. I'm sure Coq au Vin with white wine is very nice
ce too.
I've got a nice piece of cod topped with ground nuts and cheese baking on top of a bed of vegetables. It smells good anyway!

Left-overs from our chicken tagine and couscous from Sunday's guests. OH made the Claudia Roden recipe in Arabesque.

I had a nice lunch of smoked salmon on mascarpone (as I still can't eat soured cream cheese or sour cream) on french bread. As I don't eat sweet creamy desserts much, apart from the odd ice cream, but usually a lot of yogurt and soft cheeses, I'd really missed that creaminess, my only problem is not eating the whole tub of mascarpone with a spoon
I made the simple (vegetarian) form of Mapo tofu from Every Grain of Rice for supper, with rice and cabbage with black vinegar. The cabbage should be Chinese (Napa) cabbage, but I have found that pointed Hispi cabbage is just as nice, though obviously different
