Absolutely spot on Sue. I cook up some lardons and a few tomatoes / peppers etc and OH calls me as he is pulling into the station and I put the pasta on. Then stir the bits and homemade pesto in. I love pesto but can see why it’s sometime maligned!

I made vegetarian savoury mince the other night. Enough for two meals. It was rather nice...

Husband is out again tonight (he seems to have a social life ), so baked halloumi with a squeeze of fresh lime juice with garlicky, smoked paprika puy lentils.

Assembling more than cooking for me tonight - breaded cod fillet and wedges cooked in the air fryer. The wedges were leftovers from a previous meal that I froze. I will cook some fresh veg though - broccoli & green beans that will be steamed in the microwave. Minimal prep and clearing up suits me on a Friday night.

Indian feast from Waitrose tonight

Lots of cooking involved, had to make sure that the main courses had 22mins, 20mins and 18mins in the oven
Managed that

... but forgot I'd put the naan in for a few mins when I took the mains out, so they were very crispy by the time I found them

I made a pizza using a ball of frozen dough from the zero waste shop

I added tomato sauce, mozzarella, pepperoni and pepperoncini

Excellent but I need to work on my dough slinging technique

Yesterday I had halloumi and salad for lunch and made a fish pie for dinner with the idea I’d pop it in the oven when we got back from the pub. The pub had live music so we stayed a bit longer than intended but it is so close to the house that I nipped home and back to pop it in the oven in under five mins. I’m liking our new life. We had that with broccoli.

Today will be a weird one. Lunch will be on the plane. I arrive at 6:30 UK time so will probably be hungry for dinner but that is 00:30 in Kaz. I’m glad I’ve posted here. It’s made me think I might need to take a snack of some sort…..

Tandoori marinated chicken thighs and roast veg for me tonight. I had intended to pop the chicken in the marinade yesterday evening only to discover I hadn't taken it out to defrost I'm sure it will be fine with just a few hours though.

I had a cheese omelette for a late lunch after a long walk. Tonight is the remainder of a meatball, veg & tomato stew made yesterday.

I went out for a ham & cheese croissant for breakfast, so lunch was just a few little Chinese filled dumplings (mainly bok choy and mushroom filling in a wrapper) followed by an apple

Tonight will be a veg chilli from the freezer as I have a small avocado to eat up

I have butchered a sombra and a Hokkaido pumpkin, the Hokkaido can be eaten with the skin, so it is sitting in the pressure cooker, in large chunks.
The sombra I halved, gutted and put in the microwave for 12 minutes at full throttle. It went nice and soft and I could easily get the skin off. Lovely flavour, nutty and sweet, but it is a bit dry, that is why I am pairing it off with the Hokkaido.

Once the latter is done, I shall add fried onions, lardons, the sombra and creme fraiche plus loads of spices (I am going down the "goulash" route, so paprika paste, paprika sweet and hot, allspice, pepper and a good dash of pumpkinseed oil.

Last nights tandoor spiced chicken thighs and roasted veg was tasty. Cooking them in one dish gave the veg a lovely flavour. There's leftovers that I'll use up during the week. I have a bagel and smoked salmon defrosted for lunch and cooking braised ox cheeks with mushrooms and shallots for dinner.

We have a 'farm barn' chicken from the farm butcher for our supper this evening ... it's quite a big one for us 4+lb ... it'll keep us fed for several days.

Today we'll have it roasted in the big lidded enamel roaster ... it'll be seasoned and rubbed with butter and thyme, then sat on a layer of sliced onions. Potatoes have been peeled and cut into 'big roastie' size along with parsnips, and rubbed with oil and butter and they'll cook around the chicken and soak in all the lovely flavours from the steam and roasting juices. Green veg are sprouts from the stalk I bought the other day which has been living outside the back door ... and lots of lovely gravy made with the roasting juices.

Consequently lunch has been very light ... dippy egg and toasty soldiers.

Today we are having a chicken and veg traybake.
It's the sort of thing we overdosed on when we had the shop and stuff was too wrinkly to sell, or was going out of date.

When the choice is bin it or eat it, I think we would all do the same.

I became a dab hand at turning ham ends into sandwich filling or pasta sauce too.
