I'd forgotten about mince plate pie. Delicious. I don't think I own an enamel plate any more, it'd have to be a Pyrex dish lid.

Not sure if this is where to ask but does anyone here do the crispy chicken skin thing? When we went to the White Brasserie in the week stepson and I both had a poached chicken breast with morels in a very delicate sauce and it was topped with a really amazing piece of crunchy chicken skin. It had obviously been cooked separately but if I did that it would shrivel up and burn.

TVM Miss Mouse. Kavey has suggested as much on the Wildies FB page. Not sure about asking your butcher for a bag of chicken skins though.

I do it quite often and yes between twp trays seems to give best results though in a pan or on the bbq held flat with a steak press is an acceptable second. I quite often portion a chicken and snaffle the breast skin to make this.
Boned but not skinned griddled chicken in a focaccia roll with salad was my dinner last night.
Today I'm slow cooking a gammon joint, we'll have some of that with baby potatoes, savoy cabbage and root veg mash.

I see they recommend the thigh skin, I quite often remove that from thigh portions when making curries, must try crisping them next time

In spired by Masterchef last week tonight we're having smoked mackerel fishcakes, pea puree, poached egg and broccoli. Slightly faffy for a Monday but I've had a real notion since I watched the programme.

Sounds lovely, LTC. Enjoy!!
We got round to watching the finals and felt that Ed was a worthy winner (although we both thought it was slightly unusual to mix Indian and classical French in the same meal, but then he needed to demonstrate the breadth of his skills and the biriyani was obviously FANTASTIC!!! )

The fishcake on the programme did look nice with the egg on top. I hope yours works out well, ltc.
I know I've said it before but we really miss a whole dimension through not being able to smell or taste the food. I think I'd dislike some of it (just due to personal taste) but I'll never know!

Fishcake worked well and "scratched the itch" so to speak. DS2 said he'd have preferred smoked haddock rather than mackerel though still enjoyed it.
Curry night tonight with my sister and nephew joining us. DS2 is cooking -chicken chasni, dal, rice and naan. I'll put together a salad and some raita.

They look great LTC, though I’m probably with your son on the haddock as I’m not a fan of heated up smoked mackerel
On Sunday I had a small section of leg of lamb, which I pot roaste with veg
I had some cold meat with hot veg and a caper dressing yesterday , have just had the nicest bits from next to the bone with my salad lunch today as I broke it down and the remainder will be 2 portions of Real* Shepherd’s Pie
* in my family the “real” pie is leftover roast, not butcher’s mince

I've not cooked for weeks, apart from constructing 'nacho bakes' and boiling stuffed pasta - not really cooking and nor is tonight's effort - pasta with pesto. But I also had (and also not really cooking) my first handful of freshly picked from the garden broad beans. A bit small but I wanted to make sure I ate some before the snails get there. Really delicious. Not at all bitter as they can be.
Re: What's everyone cooking this week? 2
I had a pan fried pollack fillet, with a butter and lemon sauce, new potatoes and green beans. Just the job.
Re: What's everyone cooking this week? 2
Not very exciting, salmon, hasselbacks, and a mixed green veg pack from Sains (asparagus, broccoli, and sugar snaps).
Yesterday was a MindfulChef meal, Ethiopian Dora Wat. It was simple, and delicious..

Well we are back from Greece and missing it already... I emptied the fridge before we left and brought back a large fishcake and some fried pots that did us for supper last evening. Tonights supper will be cottage pie and green beans (from Greece) and the last of the cuttle fish will make a supper for tomorrow with some lemon potatoes (from Greece). I must get some bread out of the DF for tomorrows brekkie but todays brekkie will be the 2 bread rings (from Greece) covered with sesame seeds. We newly discovered these this holiday and are a bit hooked on them.

Sounds a delicious assortment you've brought back Zosh.
Tues was chicken chasni, dal, rice and naan cooked by DS2. I put together a salad and raita to go with it.
Last night was Ainsley Harriott's Cheesy chill meatballs in tomato sauce with pasta and garlic bread.
Tonight it's Thai green chicken & veg curry with rice.

I had instructions to use some of the chard from the garden so I've got a bit creative for tonight's dinner.
Minced pork meatballs containing lemon zest, fennel seeds, onion, garlic and wilted chard.
To be served with pasta and a sprinkle of parmesan.
Hope he appreciates it!
