Pasta with sautéed fennel, peas and garlic with mascarpone and a quick glug of the pasta water added to make it 'saucy' - delicious!

Salmon with a stir fry of chopped sprouts, slivers of turnip, pepper and mushroom flavoured with lemon grass, ginger, garlic and soy sauce plus some leftover rice/freekah mix stirred in. Delicious.

Tomato and mozzarella tortellini, peas, a bit of leftover marinara sauce m a bit of leftover mascarpone, Parmesan cheese

May have to stop buying mascarpone, could eat the whole tub with a spoon

Yesterday DS2 cooked a red lentil dal which we had with boiled rice and toasted pitta. We were going to have a poached egg on top but decided to just keep it vegan. It was delicious,
Tonight it's Italian sausage and veg ragu with pasta. I cooked the ragu yesterday so an easy one to put together this evening.

Chilli tonight that I made this morning. Have just got a tub of Ottolenghi's mushroom ragu from the freezer for tomorrow - I'm going to top it with cauliflower cheese.

Sue, I know what you mean about Mascarpone, especially the really good brands, but I find it invaluable for making a low cal (well low cal-ish) style pasta sauce.

Didn't eat it all, so tonight was Aldi venison meatballs with a red wine sauce.
Stir fried the leftover HJ with a bit of extra rice.
It was really good.

Feeling hard done by. I had cauliflower cheese without mince tonight! I'm going to own up to never having made any of the classic dishes with mince and a white sauce base (lasagne etc) as they always seemed too extravagant! I have sometimes had bacon with cauliflower cheese.

Bacon or ham with cauliflower cheese is one of my favourites EM :yum. I do like the sound of using it to top savoury mince.
Rice & beans here too tonight WW which we are having with pork belly basted with bbq sauce and a chopped salad. I usually use pork loin steaks for this but thought my nephew was coming for dinner and as I only had two steaks so needed an alternative. As it happens the steaks would have done as he's been offered a shift at work.

Well the cauliflower cheese topped 'shepherds' pie was delicious! OH really enjoyed it too.

Will have to do a recce of the fridge to see what veg we need to use up before I plan for tomorrow.

SG - I am dying to try mince with cauli cheese on. Inspired by the idea I made a cauli and other veg bake with some of the leftover ham - all in a cheese sauce and then thinly sliced potatoes on the top. That was dinner on Tuesday and was delicious. Lunches have been HM pea and ham soup. Last night OH was out so I had leftover ham (you see there is a bit of a theme here!) with leftover Christmas roasties and parsnips from the freezer, broccoli and grave. It was actually delicious.

We also have stacks of smoked salmon so I am going to make a pasta dish tonight I think. Any ideas? I have parsley and lemon so they will likely feature.

I a mix of smoked salmon, lemon, parsley, a few capers and crème fraiche as a quick pasta sauce.
Turkey, stuffing and leek pie for us tonight with sprouts, green beans and baked baby potatoes. The pie is one of two I made with Christmas dinner leftovers.

Beef casserole for me and GD last night. She seems to like that We had sprouts and carrots and she chose rice as the carb. Followed by red jelly with tinned strawberries in it.

Nice sounding food, everyone!

We have eaten a lot of light seafood salads, curries, soups, rice and noodles in the last few weeks, and then we seem to have moved on to heartier food more recently.

Roast venison with juniper/peppercorns, rosemary and shallots
Sausage and onion plait (with all the last ends of Christmas cheeses crumbled into the mix)
Pappardelle with duck and chianti ragu
Wild mushroom, chive and gruyere crepes with sauteed potatoes and greens

We are out for youngest's birthday later but she has requested sausage & mash followed by chocolate cake over the weekend.

I'm making a Dan Toombs lamb achari - I precooked the lamb in the slow cooker yesterday.
