.
Which recipe did you use, Amy?

Intrested in the mushroom bacon recipe if you'd care to share, Herbidacious. No preconceptions when it comes to food and recipes :D

Made Fuchsia's sweet and sour pork from Food of Sichuan as per recipe - well, almost - I add a little more vinegar as I find the sauce a tad too sweet. Also great with tofu. Served with steamed rice, baby bok choy, and copious hm Sichuan chili oil and other suitable condiments.

Getting low on FD Hunanese chopped salted fermented) red chili which is fantastic for cooking. Ditto hm Doubanjiang, but I cheat and use miso.

Your meal looked much better than the one in the recipe, Amy!

We had roast pork, with potatoes and a mixed veg dish with a spoon of tapenade added yesterday. Today its marinated calamari greek pitta and other mixed veg. Tomorrow we are heading to Haraki bay for lunch overlooking the sea. Not many days left now but I will be very pleased to see my boys and collect Grigia from the cattery and get back to my UK home.

I must admit the thought of disposing of everything that I have collected over the years fills me with dread....and fear... We are at a bit of a crossroads in life.

No worries Gruney, let me know what you think. It’s a good no fuss recipe . I finished a night shift and slung it all together before I had a sleep . Thanks Pampy

Making the most of rubbish weather to have a wee cooking day.
A ham hock is in the pressure cooker, some of the meat and stock will go in pea & ham soup and some in a chicken, bacon and mushroom pie for dinner. I'm cheating though and using bought shortcrust as I had a pack in the freezer.
Yesterday I cooked and skinned just over a kilo of cherry tomatoes will turn these into more tomato sauce for the freezer.
I could also do with making another batch of pesto with what's left of the basil before it dies back but might leave that for another day.

Lunch! https://www.theguardian.com/food/2021/o ... an-burgers

This was sensational! Can't recommend highoy enough - would have been even better if we'd been able to grill it rather than melting the cheese in a hot oven

That looks gorgeous KC2. I haven’t done much cooking over the weekend but some lovely eating. On Saturday I had an amazing sandwich of Brie and thick slices of ham on sourdough. Yesterday I had a chicken and ham pie with cabbage and grave. Really good. Had sausages and cauliflower cheese for dinner (cooked at home - the cauliflowers are finally used up!)

I have some egg mayo in the fridge that I’ll have for lunch. Dinner will be on a plane. And who knows what the next ten days will bring

Fab looking toasts KC2 :yum
Yesterday's pie worked really well though I realised after I put the lid on that I had forgot to add the ham hock so it was just chicken & mushroom. We had it with mash, neeps (swede), green beans and a gravy made from the thinned pie filling sauce. DS2 has claimed leftovers for lunch.

Love the look of your pastry, LTC!

We had this tonight https://www.bbcgoodfood.com/recipes/spa ... gorgonzola

It was very successful. I cooked the red onions for so long that they were almost liquid - with the dash of sugar and wine vinegar (far less sugar than in the recipe) - the whole dish was great.

Lovely sounding pasta dishes KC2 & Amy :yum
DS2 made the stir fry last night using a paste he bought at the Chinese supermarket, the flavour was great but my it was salty. Too much so in my case so I ended up try to pick out the least sauced bits. He'll go back to making his own, they're much better!
Either lamb curry or cauliflower & macaroni cheese for us tonight.

I made the Nigel Slater goat's cheese and figs again, this time, with thinner slices of fig. He said cut each fig into 4, which I did the first time, but looking at his pic they were quite definitely finer slices, and were overlapped. So I did that this time and it was 100% improvement! It was pretty stunning first time round, but this time we nailed it :yum :yum
Also, thanks to Patsy's encouragement, I persevered with the grill and IT WORKED!!!! The figs wer wonderfully soft and jammy.

We didn't have enough of the original goat log. I got one of the Lidl ones this morning - the soft one without a rind, and those slices were lovely and fluffy.

The honey and mustard mix would work with blue cheese, as well, I think, and probably feta.

Work is quieter at the moment, no brick stocks and no wagons to haul them! Took advantage of fewer phone calls and emails and have made a veggie moussaka for tea tonight. Have a small cabbage to use up so will cook that 'Greek' style, quick boil to part cook then into the frying pan with butter, garlic and lemon. My mouth is watering already!

All sounding scrumptious :yum The fig toasts look gorgeous. :)
We ended up going with the cauliflower and macaroni cheese last night. I much to prefer it to plan macaroni cheese as it's not stodgy and has a bit of texture. Still pretty filling though.

Curry planned for tonight is now being frozen as DS2 is going out. While I was cooking last night I made a small cauliflower cheese which I'll have tonight probably with a baked spud.
