I'm tempted to try that cake recipe, but with Felicity's frosting as it's got so much less sugar, and it's not icing sugar either, which I'm not crazy about.
Also, I prefer the idea of one cake rather than a sandwich cake.

looks like you're in a minority, sue!
the cream cheese frosting is a the best for carrot cake. the sort drizzled over, in the 'good food' recipe, would just be picked off and left by me - far too sweet.
the beach café does a brilliant carrot cake, one layer, no nuts or fruit which i can't say i miss - but cream cheese frosting with dried rose petals and crushed pistachios.

It's been a while since I last made carrot cake, but from memory, I used the zest of an orange in the cake mix and the juice went into the frosting with enough icing sugar to make the cream cheese hold together .. I never found it sickly, but creamy :yum

I also did that with the zest and the juice, Pat. I loved it but haven't made it in a long time. I'm not usually a cake eater.
