Aubergine
I do love them and have yert to find a way I don't. OH dislikes them (of course)! but I am resolved that for the rest of lockdown I am going to cook separately for the pair of us. (Thank you to WFF as well). So please lend me your favourite aubergine recipes, preferably with "it" as the star. I have already partaken of Delia's stuffed ones this week.

Aubergine fritters with honey are gorgeous. Nigel Slater's recipe is a good one, we usually sub the sheep's cheese with goat's cheese or feta or leave the cheese out all together if making tapas. https://www.theguardian.com/lifeandstyl ... e-fritters

I´m always looking for new ways to cook aubergine. I find them so very versatile.
We had a lot of ideas last year on the subject:

Recently I made Baingan ka Salaan again. It´s a Hyderabadi dish with peanuts and coconut in the sauce. Truly delicious!

I don´t put yoghurt in mine, and I also cheat by using peanut butter instead of whole nuts.

I think aubergine is a great substitute for meat in any curry . It’s really filling and good texture .

Have you tried Billy Bikers Tormented Eggplant, for the bbq. I first got it from mrmenu website many years ago. I have also frozen it. (a bit difficult with the cocktail sticks!)

Thanks everyone, some nice ideas there. Yours looks very interesting Amber although we can’t use the BBQ any more as it is deemed too dangerous if OH is having a bad day. I’m sure it can be adapted though.

I first had aubergine many years ago and really disliked it so have never tried it since (they were fried in butter then sprinkled with icing sugar and served as a dessert). However, I caught a segment on this morning's Saturday Kitchen which showed a chef deep frying thinish slices in what looked like a batter or coating of some kind. They looked as though they could be quite appetising so I must search for the recipe and give them another go.

This recipe https://www.bbc.co.uk/food/recipes/miso ... with_01293 was the reason I bought miso and very good it was too. I did not serve it with noodles because we just had a quarter each with some garlic bread as a starter. He has asked for it again soon....

I sometimes do spiced thinly sliced aubergine in a salad, they're like sponges & soak up any flavour you put with them, so I marinade them first in chilli, tamarind paste, honey, garlic, cumin toasted & crushed - then roasted - good with chickpeas/ feta/red onion & rocket.

I love that miso recipe, halfateabag!
One recipe that I've been making recently, is to microwave a whole aubergine for two minutes. Cut through lengthways and then make criss cross cuts in the aubergine flesh. I then spread Mak Tok Malaysian chilli paste, mixed with a small amount of soy sauce and 5 spice powder, over the surface and grill using my halogen oven for about 30 minutes.

My Goodness! Who on EARTH could have invented something so gross?
I had some aubergine slices, lightly battered and deep-fried, and served with honey. In a Tapas bar in Barcelona.
And my wife´s cousin used to make a conserve of aubergine strips preserved in raw sugar.

I had some pork mince and an aubergine to use up the other day, so made a potato and aubergine moussaka. Very tasty, although not quite as tasty as the real thing! Still got half the aubergine in the fridge.

Not sure why that wasn't the 'real thing' Sakkarin. My Greek friend's mother makes moussaka with potato instead of aubergine and she's a traditional sort of cook.
Or was it the pork mince? I always make vegetarian versions so don't know about the meat component!!
