We needed more bread in a hurry (well, a relative hurry ... no time to wait until tomorrow for an overnight prove for the SD etc) .... so, I made this with a little less SD starter and a smidgeon of Quick Yeast ... an hour's 'autolyse' then a a few stretches and folds and a two hour bulk prove, a ten minute hand knead, shaping, an hour in a banneton , slashing and baking in a big enamelled cast iron pot ... lid on for 20 mins, lid off for 30 mins then about 7 mins out of the pot and baking on the oven shelf. It looks good ... will cut it in a little while when it's cooled.

Thin but crisp crust, a soft springy crumb and a bit of a tasty sourdough tang ... really happy with that ... as someone on a bread forum said, you might get drummed out of the Guild of Sourdough Afficionados, but if you can make tasty bread that you like eating, without all the angst that some
folk bring to it, carry on and enjoy it (or words to that effect) :yum

I ran out of bread at lunchtime, so I had no time for sourdough, but got delayed and only got round to make it at 6pm.... I've tried a bit of a test loaf, using up the double cream I had which was just going off a touch and I wouldn't whip it for the meringues any more. So white loaf with a handful of oatmeal for fun and 50/50 double cream and water. it's just gone in the oven. A picture later if it works. With all that cream, it may come out "ready fried"!! :D

I bake the bread at 220ºC for 20 mins, then 45mins or so at 160ºC.

Guess who the idiot was who forgot to turn the oven down to 160º...

... it's a bit black, but will probably be OK on the inside. :thumbsdown :thumbsdown :thumbsdown

I had that with a really faffy rhubarb and pudding traybake last week. The top was perfect, the middle too soggy (but cooked) and the bottom burnt. Siigh ...

Suffs, the self-elevated Sourdough Sourpuss brigade won't know what they're missing - their loss ;)

aero280, ovens are a wonderful thing. The top on my blob loaf was overcooking but the bottom was still unbaked. I turned it over and it was then fine, in fact better, because I'd done the skin-stretch thingy tucking the ends under. Those higgledy piggledy crusty peaks were the best bit especially if nibbled like a mouse :oops:

that sounds like the loaf my partner baked in the tube the other day - he forgot the time and left it in for more than the half an hour it usually takes.
the crust was about a centimetre thick and very dark brown. the bit in the middle was ok but he threw the loaf away in disgust!

I nearly threw it straight out, but the inside is fine. It slices better now it's cold.

What am I baking this week? 30 bug topped fairy cakes (what is the difference between a fairy cake and a cupcake? Is it the size and the amount of buttercream?)for GS Bugs on the Beach party on Sunday. I usually bake a large cake, but as the weather is going to be hot I have decided to go down the individual cake route. I have already made a start on the butterflies, snails, ladybirds and caterpillars. GS decided he wanted a bug themed party, so I asked him what he wanted to go as - a praying mantis he said. So I have said costume ready to go!
I don't do a lot of baking of cakes as we don't really eat much sweet stuff, cheese scones and sausage rolls are what we go for.

My mum and dad would both have used their elbows to be first in line for that well-fired bread and the rolls.

Meganthemog, I take fairy cake to mean ultra light angel cake mixture, which would support only the lightest blob of whipped cream in the "dug out" or butterflied top, whereas cupcakes are light cake mix with icing or frosting on top. That's just me though. Well done on the costume - we'll expect photos you know ;)
