As it tastes nice, maybe make it again soon to the recipe and freeze some? I wondered of tahini would make the cake dense - I'm not always sure if Guardian photos are accurate.It sounds nice which is what matters!

It's a recipe I'll certainly be making again. It really is not one of those tooth-achingly sweet cakes, as Ebuhehi says (Admittedly I slightly reduced the amount of sugar.)
We had it with some creme fraiche that needed finishing

Made the Rachel Roddy Chocolate, almond and cherry cake today for friends coming to lunch tomorrow https://www.theguardian.com/food/2022/f ... herry-cake

I used a 9in tin as she doesn't say what size to use.

We'll see how it is when I cut it tomorrow!

Here's the cake I made for an early Valentine. We are going out to lunch tomorrow so we will be quite full!

A Zebra Cake. It's the second time that i've made this and this time I put more batter in for each layer. Last time the stripes were so thin that they all sort of merged together. Next time i will add a couple of spoons of flour to the plain mix. Adding the cocoa to one half stiffened it up and the two batters were not the same consistency which messed up the spreading a bit.

And while that was cooking, I made a batch of bread rolls. some were round and some were mini-loaves...

I whipped up a lemon drizzle cake yesterday. It was an experiment for 2 reasons: the first was because it used kefir and the second because it looked really easy/speedy and I wanted to see if it would pass muster for an upcoming fund raiser for the Wildlife Rescue I am involved with. Myself and another volunteer will be manning (womanning ?) the Tea and Cake stall - she was visiting to discuss things, so I thought we could test out this cake. Then she arrived with 2 enormous slices of a victoria type sponge cake from the local baker

But have to say the lemon drizzle was delicious too. I didn't have any kefir ready to consume so used milk with a squirt of lemon juice to curdle it.

just in case anyone wants to try it:

6 oz SR flour
4 oz caster sugar (blitzed granulated)
1 tspn BP
Zest of a large lemon

5 fl oz kefir (or soured milk)
5 fl oz oil
2 large eggs

Dry ingredients mixed together
Wet ingredients mixed together then beaten into the dry ingredients

Batter poured into a (lined) bread tin, baked for 45-50 mins at 170c

4 TBspns sugar dissolved in the juice of the lemon that is then poured over the cake when it comes out of the oven, then left to cool

It's the one that's 4.5 x 8.5 ins. so I guess a 2lb loaf tin ? I also used the standard greaseproof liner that fits it perfectly.

Sunny day tomorrow by all accounts.... Oven going on, roast chicken late lunch, with a moussaka (pork mince) also in oven (tatos on the bottom of the dish!) tarte tatin, ckx. leek and mushroom pie, roast yam (from Loosha) and some roast veggies. That lot should see us through for a while.
