looks divine Amy. I made a banana and custard cake yesterday and iced it today in an ermine and quark frosting, it was not over sweet and the cake was moist too. Glad I halved the recipe or it would have been 4 layers high and would have lasted forever. Very pleased with the outcome.

[*]I made the courgette slice Suelle suggestd on the Pack Up threadi didn’t want to use ham or bacon as they can still taste a bit unpleasant to me, so I stir fried some diced mushrooms with garlic and tamari and a tiny bit of oil until they were dry enough to use as replacements; sun dried tomatoes would also work
Very good, very filling, I’ve frozen some to see how that works

It does look quite robust owing to the flour, as Suelle mentioned. Lots of possibilities for fillings too!

Glad you like it, SS. I'd be interested to hear the results of freezing. I don't usually make it until later in the summer, when I get a courgette glut.

I’ve frozen it and it was fine. Just like freezing quiche. Haven’t made it for a while but used to do it a lot. I think Suelle said it’s an Aussie thing!!

Forgot to say - yours looks good Sue. I often used mushrooms as I wasn't going to add any meat and they give it some extra flavour.

Don't usually post on here as I do very little baking, but this week has been one of my busiest, so :
Shortbread, (vegan and basic)

all above for a volunteer day at the wildlife rescue.

I followed the recipe as published, but intend to make another batch using courgette in place of carrot next

Cheers PP they look good. Hubby is rather partial to Twiglets but they're a bit hard on his teeth these days, these would be appreciated I'm sure.
