Back to soup making after a lull when I used various portions from the freezer. Today I cooked a panful of bacon, veg and yellow split pea.

Sounds delish LTC. I have a big bag of lockdown yellow split peas winking at me. Love bacon or pancetta in soups.

I had a little spate of soup making last week for some poorly relatives. Gill's tomato soup, my standby, then a thrown together inspiration - gently fried finely chopped onions, sweet potato cubes, squash cubes, chicken stock, leftover Elisa porcini roast chicken chunks, s&p etc - and then extra hot New Mexico green and red chile beef stew/soup.

I've got a new invention simmering on the stove ... Squash with celery and apple soup ......... so far it tastes very promising indeed ... it's for the next four days of OHs lunch soup flasks .......... I'll let you know what he thinks ...

That sounds nice Suffs, we have a squash which I want to use up.

We make a similar sounding potato, celeriac and apple soup which is really really good with some stilton crumbled on top.

Update ... OH pronounced his taster 'beautiful ... an absolute winner'.



I onion, chopped
3 sticks of celery chopped
1 Uchiki kuri squash .. peeled and chopped

Soften the above in a little sunflower oil ... add 3 eating apples, peeled, cored and chopped

add sufficient made up Marigold vegetable bouillon to just about cover ... simmer until all are soft

Whizz in blender and serve.

I no longer bother to make up Marigold for most purposes; I do measure both water and powder but then put them straight in, saves washing a jug. Cubes sometimes need making up

I’ve been working my way through a big pot of good old River Café winter minestrone, this one seems especially nice, which I put down to an unusually large Parmesan rind and one of the bouquets of fresh herbs I made up in tea bag papers and froze when herbs were at their best

Yes, me too, Sue, and I did it with a cube last time I used one and it was fine.

Something called "Russian Vegetable Soup" today - an onion, potatoes, carrots, parsnips, and cabbage - but I subbed frozen spinach. Also parsley, dried mixed herbs and fresh grated nutmeg.
It was supposed to have a garnish of crispy fried leeks but I couldn't be bothered. It was delicious as it was. Because of the spinach it was green!

I rarely use soup recipes as such, but this was a good idea. I don't think I would have thought to add spinach/ cabbage/ kale, or nutmeg. (I always use nutmeg with spinach soup.)

Made by J while I had a horrendous morning at work.

Wasn't even supposed to be working today but someone went sick.

Last week was a big vat of pea and ham with both dried and fresh peas. I have carrots so I am thinking carrot and coriander inspired by this thread.

Tomorrow will be red lentil and tomato soup for lunch, because I have all the ingredients.
We have an overstuffed fridge, freezer and cupboard so buying food is currently verboten.

I made a very nice soup out of one whole leek and a load of green leek tops, a massive potato that was too big to bake in its jacket, a carrot, a stick of celery, garlic Marigold and seasoning, but the twist is I’m not blitzing it, all the veg are diced or shredded
