Apologies if we already have a soup thread , couldn’t see one . I love soup and find it a very filling and nutritious lunch . Have been quite poorly over the weekend so made myself a pot of broccoli leek and Stilton soup .

Sautéed some chopped leeks and celery with the chopped up broccoli stalk and garlic till soft . I then added some vegetable bouillon and the broccoli florets and simmered for about ten minutes . Blended the soup till fairly chunky , added some black pepper and crumbled Stilton over till melted . I didn’t add too much Stilton as struggle with too much of it . The consistency which is a key thing for me with soups was spot on

These are veggie titles, but please don't expect me to find any destructions as I judge soup items by eye and to taste:

Carrot and coriander or ginger
Rustic root country soupntry vegetable
Curried vegetable (samosa type veg)
Kidney bean, baked bean or black bean soup - ordinary, creamy or spicy
Leek and potato
Red lentil and coconut
Minestone
Mushroom
Pea - and mint if you must
Pea, shallots & crispy shallot garnish
Roast vegetable chunky soup
Rustic vegetable root soup
Spicy chickpea
Spicy egg noodle soup (more an Oriental broth)
Spicy parsnip
Spinach finds its way into thin soups.
Sweetcorn (+ curry, ginger, cumin whatever)
Tomato and basil
Tomato and red pepper.

Can add meat or fish to the above, or make a meat or fish soup designed around that star instead.

Binky, black bean soup is within the fourth item. I missed borscht though and goodness knows how many others. They'll be popping into my brain now and no doubt I'll completely forget them again before posting :lol:

DS has been really really poorly in the last few days - in hospital for some time and just not eating. i suggested his childhood favourite. He called it gravy soup. It is in fact Baxters Royal Game soup.

D-I-l went out and found some and he is eating again. That and bananas. Much relief all round.

Must be something in the air as I was in hospital at the weekend too. Am really struggling to eat so will keep an eye on this thread. Think I’ll only have the energy to heat up a can at the moment though :cry:

We had a lovely free range organic chicken yesterday, so a chicken and leek pie has been made and I have a lovely chicken and barley soup simmering with lots of lovely veg in it.
Later in the week I will be using a butternut squash for soup...anybody got any tasty and different versions?

Butternut can be bland so curry paste is a failsafe, or carrot and fresh ginger, or carrot, onion, turmeric and lots black pepper. Add coconut milk for flavour and to balance to spice.

Could sweat some onion, garlic and bacon/chorizo and blend in with extra crispy bacon or chorizo for croutons and bread croutons in the rendered oil/fat.

Red pepper roasted maybe, which seems to be popular but never seems to add much to me.

I always like root veg in a soup with some kind of spice , whether it’s chilli, garlic and ginger or a more complex spice mix . Lentils are good too to bulk out to make it a more complete meal

Thanks both, I’m feeling really fed up now. I spent over 12 hours in A&E, then was transferred to a ward with severe vomiting and dehydration (sorry if TMI).

I’ve not eaten properly since Friday and still keep feeling sick. Been told to take the week off work and will see after that. I managed a small jacket spud and one of those frozen steam bags of veg last night but it was a real struggle.

Sorry to derail the thread, some of the suggestions on here sound great for when I’m feeling a bit better. My husband is on a mission to find me some tinned soup that isn’t creamy, spicy or too acidic and is also veggie. Any ideas?

Sorry you're not well Smitch - hope you'll be on the mend soon.
Some suggestions for tinned soup :
Chicken/Scotch/Highland Broth (Baxter's)
Chicken Noodle
Spring Vegetable or Minestrone (Knorr dry packet soups)

Would low fat soups be any use? I'd have thought they'd not be too creamy.

Thanks, Pampy. I’ve just remembered Sainsburys do a golden veg soup in a tin I’ve had in the past. Have told my husband to call in on his way home.

Heinz do a country veg in a tin which is very bland. They do a three-bean soup as well which is barely spicy.

Grace (packet soup) do a Pumpkin soup, being a broth with little noodles. To me it has good flavour and can also be used as medium to add things, e.g. beaten egg strands, chopped mushrooms or cooked spud pieces or peas - whatever you could eat. Try Tesco and Sainsbury.

Your hubby could also look at the range of fresh soups in cartons or tubs in the supermarket fresh fridges. My vegan friends eat lots of those every week.

Are you taking any multi vitamin pills?

Is cocoa soup? Some people can manage that when food seems impossible. Just reminded me of those "meal in a drink" foods that chemists have in the diet section.

I like some of the Covent Garden range. They used to do a nice spinach one but I’m not sure it’s still around.
