The Zest of The Buddah´s Hand (Citron)
Has anyone used the zest from the fingers of this mystic looking Asian golden yellow "citron" ?
What were your results ?
I am aware, that there is very little juice from this odd variety of citron ..
I have also read that, alledgedly, it is quite an asset in reducing high blood pressure amongst other health ailments ..

Don’t think I’ve ever seen one fresh but I might have tasted it in candy, didn’t make much impression

I've never seen nor heard of either of these! The first looks like a vegan-friendly octopus.
I can definitely see the potential for the finger lime in all manner of trendy eateries, given that it combines the fashion for covering everything with lemon and the novelty of spherification without the need for the chemistry set. They'll have to get yuzu out of their systems first though...

Belgian Endive uses these a lot.
I should think therefore that they are rather lovely and delicate - as that is how she cooks.
I've never seen one over here to try, even at food events.
Although I've got a couple of recipe ideas of their use.

Thank you for the links and all your feedback ..
I returned home today and so we went to the Le Mercat de La Boqueria and my Asian preferred Kiosk, vegetable Farmer & Monger had just received a few of these Buddah Hands and I could not resist the temptation ..
They have an amazing "bouquet of lemon blossom " .. I think I shall try a tiny piece of fresh fish and zest of the 1 Finger !

Coincidence: saw some in a cardboard box on one of the Asian stalls at the Saturday market just down the road last week. Will take a closer look on Saturday, though don't think I'll be buyinh them this time as I'll be going away for a while.
What would you do with it if you had one?

I have a languostine dish I'd really love to replicate from Cadiz, Marja.
The memory is fading, but I'm thinking it has mint, wakame. Sesame definitely. Hand of buddha would give a perfect aromatic lemon-ness.

No, unfortunately we did not go however, I know where it is .. Nice website ..
I would write them on their website for the recipe .. Or via email and send them the photograph.
I shall buy some langostinos ( extra large prawns ) and am going to try out a bit of the Buddah Hand´s Zest and see what happens ..

Has a truly amazingly wonderful lemon blossom fragrance ..
There is very little juice ..
From what I have read so far, it is best used as a zest ..
Since I had been very busy today, I have not had the time to do the research but I have a close Chef Friend who I will call tomorrow ..
I am going to add a sprinkle of the zest to 1 langostino (prawn) that I shall sauté in Evoo with a bit of Basque sea salt, 1 tiny garlic clove and fresh parsley minced and see how it tastes !

An experiment which was lovely ..
Rucola, Radicchio Salad with Buddah Hand " Length-wise Zest" ..
Rucola for 2
Radicchio for 2
2 to 4 lengthwise strips of Buddah Hand Citron Peeled into strips ( in length wise " ribbons " ( the slimness of fresh chive ), they are edible ( Blanch until tender in boiling wáter with a bit of salt and a bit of sugar in the raw or Golden sugar ) and let cool before combining with the rest of the ingredients ..
1 tablsp. Modena
4 tblsps. Italian Bio Green Evoo
1 clove minced garlic
1 tablsp. fresh squeezed lemon juice
Combine all ingredients except the Rocket & the Radicchio and refrigerate for a couple of hours ..
The fragrance is amazing ..
The 2 varieties of Italian lettuces / field greens are the bed of the salad ..
We have also found recipes for Lemon Preserves employing Buddah Hand & ginger & Candied Buddah Hand Citron and a recipe for Salmon using Buddah Hand Blanched until tender and used as a very light drizzle on oven roasted salmon or smoked salmon ..

I would have thought rocket sat in any dressing for a couple of hours would make it very slimy
