1893: The Waldorf Salad Lives On ..

The Swiss immigrant, Oscar Tschirky, was the Hotelier of the renowned Five Star, The Waldorf Astoria Hotel in Manhattan ..

Here is the original recipe (and the * modern additions that were added after 1950 ) .. :yum

1 large peeled apple sliced in half and then into quarters
1 stalk of celery diced
Salt & Pepper to taste
A small head of lettuce ( Iceburg was used however, now there are various options: Endive, Red Oak Leaf, Bibb, Boston, Romaine, Water Kress, etcetra )
Mayonnaise to taste

Toss with 2 large spoons ..


* Additions After 1950:

* Walnuts ( a handful )
* Some crumbled French Roquefort
* Raisins
* White Grapes or Red Grapes

My mother and I have made a number of variations on the theme, often far enough from the original that we call them Astoria salad, as not exactly Waldorf :)

We leave the peel on the apple and dice rather than quarter, the idea being that the halved grapes, apple dice, walnut pieces and bits of cheese should all be of similar size so they mix well

We use whatever cheese we have; cheddar or Comte is good; and add a good squeeze of lemon

We might use pears and Stilton rather than apples and Roquefort, we might use lightly toasted hazelnuts

Always apple and celery though

Mine is very similar to the original recipe, Alexandra, but with the addition of walnuts, diced apple and mayonnaise.

I enjoyed it very much when I made it, but that was quite some time ago. It's time to make it again I think!

Unusual subject sitting in an Italian Restaurant, in Downtown Madrid ! :lol: :lol: :lol: :lol:

However, it was quite interesting actually speaking about the history with dear friends who brought the subject up !

We shall be in Madrid until Sunday .. I had flown from Cádiz to Madrid to meet my Dear, and we are doing some retail therapy here ..

Panama Jacks ( military type combat boots ) for our treks into the Catalan Pyrenées, thermal vests and some jeans ..


We also have some business here as well and so, enjoying the City and all our fave eateries too ..

Can´t say I always use cheese in my Waldorf; but always lettuce, walnuts, celery, apple and mayo.
Problem recently is that there are no apples! :gonzo
I probably need to try this with pineapple and call it a Caribbean Waldorf.

I have never used cheese in mine ..

The pineapple sounds interesting .. ( however, might be a bit dominating ? ) ..

What about pears ? grapes ? or maybe green melon ? Mango or Papaya might do well .. :thumbsup

No pears, difficult to get grapes Member 461.
Mangoes might work, but they´re just out of season right now. Papaya -not really my favourite fruit; unless it´s absolutely and perfectly ripe, it tends to have a somewhat sickly aftertaste.
No, I think pineapple would work - but just a touch, nothing overbearing.
