I’ve not been posting much here as cooking has been mainly dull and often last minute as my sense of taste permitted
But things move on, and tonight I had my first beef of 2021, a rtc rump steak served with wedges, green beans, cabbage. I had a lamb chop last week
Not an exciting meal but means I can try eating almost anything that doesn’t contain cumin & coriander
I have a piece of leftover steak as that has been a problem, for a while meat was ok when freshly cooked and warm but revolting the next day, so fingers crossed for tomorrow’s lunch

Great that you enjoyed it Sue - hope cold passes muster too.
We got some Thai green curry paste in a tiny shop last week so had a chicken and veg curry. It was absolutely fantastic - spicy but with a real depth of flavour. Lots of chicken leftover for lunch with salad.
Not sure this evening. OH is at drinks so it might just be me. We have some fresh linguine that needs to be used up so something with that I think.

A Thai green curry is one of go to meals for "can't be bothered" Thursday as with bought paste it's so quick & easy to cook. We're having one tomorrow.
Plaice - yum suffs I've not managed to get hold of any for a while. My preference is lightly floured and fried but poached sounds good too.
Tonight it's skinless block haddock fillets topped with a pesto and breadcrumb mix, potatoes and probably salad. Both my basil and curly parsley are rampaging so the pesto will be made from them and walnuts instead of pine nuts.

J is due back from the North East (again) about 8pm, I am up at 5 tomorrow for work so dinner needs to be something I can prepare ahead.
I have retrieved a cheese and onion quiche from the freezer.
We will have that with potato salad and the green bean and walnut recipe Scully mentioned.

A twist on my usual herby crust fish. This time haddock, no hake available, with an herby almond crust.

The leftover steak made a very nice Thai rice noodle salad. Sorted.
I’ll get a better steak next time but rtc supermarket steak was fine given there was a 50% chance of having to discard it

Not quite! Overseasoned,
because, hotel where craft group meets is our favourite coffee place. The person who runs the cafe part sent her love, OH was chatting to me about it when she came home. Thus when I returned to prepping couldn’t remember whether I seasoned the fish or not. So made sure.!Next time I'll try pesto and crushed walnuts perhaps.
Nice plate of food Amyw, but if that's a chilli or two I'd have to leave them on the side of the plate. Sorry.

Good looking dishes Amy & Dennis, shame the haddock was over seasoned but easily done.

Must be crusted fish week. Our haddock last night was lovely, though the photo doesn't do it justice a combination of iffy lighting and wholemeal breadcrumb make it look as though it's burned when it wasn't.
Lots of pesto left which I'll freeze in small amounts. I used 150g basil & parsley leaves, 75g each of walnuts & parmesan, 3 cloves of garlic and around 180ml of olive oil.
Easy one for us tonight Thai green chicken curry and rice.

Is that a jacket potato on the plate as well, ltc?

Yes it was a baked spud, cooked in the microwave and then popped into the oven to crisp up for half an hour as I do like a crunchy skin on them.
Quantity wise I used a tablespoon of pesto to one slice of bread crumbed for two fillets.

I am having a sort of tofu Thai curry
Being unable to eat so many things recently I "invested" in a copy of Ching-He Huang's Asian Green, as Chinese, Japanese, and Korean food tends not to contain the ingredients I couldn't deal with
Really not my sort of thing, and the recipes contain so many ingredients, despite being described as simple everyday food, that scaling down for one person wasn't a generally viable
So I looked at books I already had, and rediscovered Vatcharin Bhumichitr's Thai Vegetarian Cooking, apparently in Thai cooking tofu is usually fried, then smothered with vegetables in sauce to serve. This suits me much better than juggling sitr fry, I have been baking rather than frying the tofu then smothering it in his curry sauces and variants thereon,. Wish I'd though of it earlier, thanks Vatch! I an putting back the fish sauce he replaces with dark soy as I love the stuff
Tonight's effort involves baked tofu, baked aubergines (not very Thai, they like them rare) Mae Ploy red curry sauce, coconut milk (Maggi dry powdered) and green beans with a bit of onion and garlic. Not authentically anything but dinner

KeenCook2, my sort of dish, I tend to photo OH's plate as presentation is better .....
