Now I know it's ok to chill/freeze - I'll be making a tomato, mozzarella and basil risotto.

No measurements! Water in a jug, add spoonful of chutney, squirt of tomato paste and crushed garlic. Add to roasting tray of potatoes with about 15 minutes to go, adding raw kale on top to crisp. Sauce is meant to thicken.
Our guess work was out! Needed longer.

It was based on a Hello Fresh recipe, but he was cooking for five of us with a whole chicken, hence the need for guesswork. Fortunately he's a natural.

A tbsp of water per person, same quantity of mango chutney and same for tomato paste.

Sounds delicious dennis, I'd of eaten all the potatoes
A bit of a random one for dinner yesterday - turkey wing drumettes marinated in yoghurt, lemon juice and tandoori spice mix then baked on top of sliced sweet potato and red onion. I had it with a baked large flat mushroom. I usually use turkey wings for soup as they can be quite tough but the marinade made the meat lovely and tender. It did look a bit "Flintstones" though

We had to cook 4 Waitrose spicy lambburgers last night as they were a couple of days over and there was no room in the freezer.
Funny, we then had to eat them all (!), with some delish parboiled and roast and squashed postatoes with lots of fresh rosemary - I can't remember who it was that said they'd done that to their potatoes but it was such a good idea we did it and it was really great
Lunch will be fresh baguette with some lovely President brie and sliced tomatoes, possibly some prosciutto, possibly some h-m coriander pesto ....
Supper will be finishing up a rather tasty red lentil, tomato and spinach thing OH made a few days ago, using frozen spinach to try to make a bit of space in the freezer.

Morning all. Lovely looking and sounding food.
We have had a great and rather indulgent food weekend. On Friday we had linguine with prawns, harissa, cherry toms and tender stem broccoli. On Saturday we wandered up to Portobello and ended up having lunch in a Thai cafe of laap, morning glory and a noodle dis. Delicious. We weren’t very hungry in the evening so OH just has some ravioli from the freezer and I had a sausage and some broccoli. Yesterday we went to a pub fairly close to us and had the absolute best roast I have ever had. Neither of us is particularly a roast fan but we saw the table next to us receiving theirs and couldn’t resist. It was pork belly with the crunchiest crackling. Rather than apple sauce, there was half an apple baked with fennel seeds that was so soft it was like apple sauce. This came with roasties, red cabbage, green beans and broccoli. And of course a delicious gravy.
Tonight is salmon with noodles and veg. We went to a little Asian grocer on Saturday and picked up a packet of egg noodles that apparently are also made with shrimp. The lady serving us said they are really good.

I'm a big fan of rosemary on roasties KC2 that's how we had them yesterday.
Oh I do love a good roast dinner Rocky and belly pork is one of my favourites.
Yesterday I roasted a small piece of boneless lamb leg with garlic , rosemary and sage. We had it with rosemary & garlic roasted potatoes and carrots, savoy cabbage and gravy. There's just enough lamb left for a lunchtime sandwich.

Tonight we are having pork loin and mushrooms in a white wine creamy sauce with basmati rice and a side salad with a bottle of chilled chardonnay.

Yes to rosemary with roast potatoes liketocook and that roast would be right up our street.
In contrast, yesterday's lunch was bruschetta.
And OH did a wonderful Salade Nicoise for tea.
Healthy smugness all round.

What vibrant variety of meals are being cooked, I'm drooling.
The chicken traybake was really tasty - definitely a keeper for a week day meal.
Ainsley Harriot's Chilli cheese meatballs and pasta for us tonight.

We'd had roast shoulder of pork on Sunday (bought Saturday from a farm butcher on the way home from staying with MIL for a few days)... we had crisped up new-crop Maris Peer, wedges of butternut squash roasted with sage around the pork, and runner beans from the garden.
There was plenty of pork left over for a sandwich at lunchtime and Nasi Goreng for supper.
Tonight's supper will be plaice fillets with Maris Peer potatoes and runner beans ... haven't quite decided yet whether the fish will be dusted in flour and pan-fried or baked in a little milk ..........

I now have a total of 7 jars of strawberry jam. I am being thoroughly selfish and not giving any away!!
I am having liver, bacon and onions tonight, but as OH won't eat that, he's having a ready made lasagne.
