I've not been on the tour, but I've been to all the shops they show, and use them all from time to time (less so Fortnum's which is overpriced imo), covers a fair bit of ground in 2 hours looking at it.
I don't like Paxton & Whitfield as much as I used to, since they modernised it a few years back, (though still amazing) tend to go to Neal's Yard either in its original location in Covent Garden or the Islington branch, or La Fromagerie

Too much walking to taste enough cheese IMHO. I’ve done one of Celia Brooks’ Borough Market tours (thanks kids) and I would say that was much more leisurely and specific. And we had a light breakfast first. I think we finished up at Neal’s Yard IIRC.

I use a few of those shops, so I'm not sure that I would gain much. But it would make a nice day out for people who are not London regulars.
Neal's Yard have a company policy of offering plenty of tasting, so if you feel hungry near there, go in and be indecisive, and you can eat a lot of cheese!

Rather than a walk, I think I'd prefer another of Ned Palmer's cheese tasting events, I have been to a wine (edit: no cheese!) and beer pairing event he did with Pete Brown, the beer writer.
He's a lovely bloke, and you get generous amounts of cheese; I've got his book A CHEESEMONGER'S HISTORY OF THE BRITISH ISLES but I haven't read it yet, he has written more since.

As I say, with the Celia Brooks one it included breakfast and then the stallholders had prepared various tasting platters for the group. After visiting about 4 I was stuffed. I think there were 8 in all. She had organised it very well and it started quite early. It wasn’t just cheese though but that was a feature. Because they knew her and it was Borough the non pre-arranged stalls also chipped in. I think she does them once a month. My kids gave me The Experience as a Christmas present. I took BF who is hard to please as she has allergies but she enjoyed it too. Yes it’s expensive but a nice gift for a foodie.
