I was pleased to see Tim Hayward recommending Victorinox as a relatively affordable and dishwasher friendly alternative to the very expensive knives.
Andi Oliver recommended our local cutler, Kitchen Provisions (also mail order) - it's a lovely shop if you are ever in the area, and they restored the beautiful Henckel Zwillinger knives (Boudain's favourite) my FiL used for opening boxes, would have cost a lot of money to replace. They now have 4 shops in London - Stokey, Soho, Kings Cross and the Borough

I have that tomato knife, it's about 30 years old, still going strong though I don't use it much. They must have made that exact pattern for decades, my mum had one long before I did.

Very nice but do we need the names of real classics, that have appeared on British bistro menus and in cook books for years translated into nursery English? I've been making pommes duchesse for years, not "puffed potatoes " which sound like something McCain would freeze and I might give Sole Grenobloise a go again, I don't like oeufs en meurette (or I didn't when I tired them some time last century)

Our generation may be familiar with traditional French bistro type recipes … however there’s a whole generation out there … to be frank
there are two generations after us who are relatively unfamiliar with bistro style cooking … it’s making a comeback thank goodness … and if new cooks need more descriptive and possibly less intimidatory names for dishes that I regard as old friends I’m not going to complain.
I enjoyed Oefs en meurette when I ate it in Burgundy and ordered it again when in Paris … I couldn’t tell you what the difference was (the four or five years between didn’t help) but I did not enjoy the second dish as much. That’s often the way of things.

Not sure why we are celebrating Bastille Day but the food looks good! (Not in this case but I sometimes find translations quite helpful).
