Last night we had a lovely Claudia Roden variation on the chicken traybake theme - this one had capers, green olives and boiled lemon slices. Marinade was olive oil, honey, lemon juice, ginger and turmeric, lots of chopped garlic and a slurp of wine. It was from her Med book. Boiled lemon slices were added before baking.
I would post a pic but my phone and my laptop seem to have stopped speaking to each other and I haven't worked out how to re attach them Ah, seems to have been sorted ...
I think I've finally discovered the "secret" to crispy chicken skin.
Every time I marinate the usual bone in + skin thighs we always get from Waitrose, the skin is wonderful.
I've not had the same success rate with any of the other methods although sometimes they are, sometimes not.
Rocky, I have cannelini beans and chorizo - how do you do yours? (I haven't got the fish, but would be happy to eat the chorizo and beans as the main.)

I went out to breakfast with my tennis chums to a little cafe in Northwood called CoFix. I had avocado on toast with grilled halloumi on top. SO much better than with eggs. Alison had it with eggs, not halloumi, and Rachael had smoked salmon with scrambled eggs and toast, with, not in. It was one of the best meals I’ve had out for ages.

We are having a big bowl salad tonight.
All the usual salad stuff plus boiled egg and cold sausages.
Probably cheese and crackers later.
I'm tired as I was at work for 0700 today and that always makes me hungry.

KC - it is rather made up rather than a recipe based on a dish we had years ago at the Hoxton. I soften an onion and add the diced chorizo until it releases its oil. Then deglaze the pan with whatever wine is to hand. Add a can or two of tomatoes, smoked paprika and chipotle chili and cook for a bit. Then ad the beans and cook for a bit longer!

We have nephew coming to stay tonight - he is doing some work experience with OH. He is 16 and very tall so eats a lot. We think we will have steak, chips, onion rings and veg of some sort this evening. The pub does two for one pizzas on a Monday so that we will be tomorrow.

I enjoyed the pleasure of bit of leftover cold naan pizza for breakfast. Lunch will be some of the salmon pate I whizzed up yesterday on crackers with some salad. BBQ tonight.

I finally got around to making the black bean chilli I’ve been threatening ever since I got the double size can in Lidl’s Spanish week, bit of a bung it all in the slow cooker thing with lots of chipotle and paprika. Very good, I am a convert to the black bean for this. Several potions for the freezer too.
Had it with corn tortillas and a little salad of avocado, onion and tomato with lots of lime and coriander.

A couple of months ago I bought a whole St Nectaire cheese in Costco. It's been in the fridge for a while, and is reaching its best before date, so we opened it and let it warm up. It's very nice and soft and tastes wonderful. There's only enough left for another four days supper,,,

Decided to have a bavette steak last night, with some new potatoes, green beans and a little tomato and onion salad,
Will probably be chilli part deux tonight while the second half of the avocado is still good

BBQ leftovers today, the salad bits for lunch and we'll use the remaining cooked chook in fajitas tonight.

One of the nicest things I’ve cooked in a while … really going to try and get my cooking mojo back . Pork chops air fried with pesto and Parmesan . The salad is giant couscous (far superior to the normal one) , tomatoes, mango , red onion , basil , parsley , garlicky courgette ribbons and olive oil

We had pizza last night. Delicious. Tonight is peppered mackerel and salad. I have a M&S whole grain and edamame pack to have with it. Lazy but I have a 6pm meeting!

We had puttenesca sauce too, last night Suffs. It’s such an easy dinner when you’ve been travelling for hours. We had it with tortelloni.
Not sure about tonight but I have a couple of cod fillets I’ll probably use.

Last night I had what seemed to turn out to be caponata. (Whenever I have tried to make this, the balance of sweet and sour has not been right, but coincidentally it was bang on with my homegrown aubergine concoction yesterday.) I wasn't sure what to have it with and ended up having it on a slice of toast with some cheese.
Any suggestions for the leftovers? (How to eat it rather than how to make it into something else.) I usually just have it with some mozarella.
I had gazpacho for lunch today. (Getting in the zone for being in the Andalucia in a few weeks ) Bought, though, a while back. Will make a batch if it's still the weather for it next week. I will be making some more cucucumber and yoghurt soup tomorrow, or Friday.

Served with wholemeal pittas, homemade coleslaw, h/m hummus and lightly pickled sliced red onion. Very delicious
I didn’t make the yoghurt sauce as we’ve run out of yog but with all the other accompaniments it wasn’t needed.
