Bringing to room temperature.

Postby Gruney2 » Sun Jul 26, 2020 5:47 pm

It is my intention to roast a chicken today. My chicken has been in the fridge and I've just taken it out so it'll be a while yet. I like to go for a pint on a Sunday afternoon, hence the lateness in removing it to attain room temperature. I'm usually away from the house for say, 3 hours, but I've always been nervous about taking the chicken out of the fridge before I go out, so it will be at room temperature when I get back, and off we go. Would it be safe to leave it that long, do you think, please?

We’re not going through a heatwave at the moment, so I would be fine with 3 hours or so ... as long as it was inaccessible to marauding flies.

Enjoy :yum :cocktail:

Thanks a million, Suffs - that's exactly what I wanted to hear.

Edited to say I'll be using Simon Hopkinson's method from his "Roast Chicken and Other Stories" - a book we've agreed on before.

I always bring food up to room temp. before cooking. Adjusted to Seasonal and heatwave weather. It is generally put in a microwave to keep safe from cats and flies (if around).

Me too.
Surely the oven temperature will reduce too much if chilled food goes in.

Got to admit I’m very lax about this and just defrost anything on the counter either when I’m at home or go out. It hasn’t killed me yet or given me any nasty effects. The way I look at it is cooking it solves any problem. One thing though is if I cook anything rare like beef I only cook it on the day I buy it.

Cheers
NLB :thumbsup
