Courgettes
Following on from aubergines, it's that courgette glut time of year. I have 750g of them in the kitchen, which I would like to do something with for dinner.
Any suggestions? The larger the quantity required in the recipe, the better. I will try cake at some point, perhaps
(I hope there ins't a courgettes thread. I did a search but nothing showed up. If there is one, could someone point me to it and delete this?)

Has spiralising gone out of fashion? I do hope so.
I brought my kids up on Delia’s gratin which can be served as a main course or an accompaniment. Probably seems old fashioned now but I still make it although I don’t have a glut these days.

We just love roast courgettes with loads of herbs and garlic -anything else you have to throw in, peppers, aubergines, onions - whatever! No matter how much we think we've made we always end up eating more than we thought we could! With quinoa, couscous or bulgar, with feta or goat's cheese ...
Or on a base of bought, readymade puff pastry with tomatoes, dried tomato paste, herbs, cheese - like a quiche but without the custardy filling ...

The both sound nice. I guess a pizza bianca too... although wouldn't use that many.
It turned out to be more like a kilo that I have. Have cooked up two with sage and garlic (at husband's request, possibly to go in one of his omelettes!...) but this leaves three and it will be an ongoing project.

As you have started a thread on courgettes, I thought I could ask a question about growing them on here, rather than on the gardening thread : that is, are the flowers on each plant the same sex ? I ask because I only have one plant growing in a potato bag, but so far all the flowers have been males. No sign of any swelling that would develop into a fruit. Could this be because the flowers need to be pollinated by flowers from another plant ?

I think the male ones come first, then then females and fruit. I also often find that some of the first fruit go a bit 'funny' - soft and yellow at the ends, then drop off, but edible ones usually seem to follow.
You still get male ones after courgettes start forming.

I like the Australian classic - Courgette Slice - for summer meals or picnics (if we ever get any more hot days!). It's a cross between a crustless quiche, and a savoury cake.

Courgettes sliced and in the oven with a splash of oil, after 10 mins add garlic, halved cherry tomatoes, after another 5 mins add a pinch or more of chilli flakes, a handful of chopped mint and dill, a tablespoon or so of balsamic vinegar and half a tub or so of ricotta, stir through and serve with pasta.

we don't have a spiraliser but sorry, both my partner and i really like courgetti with a veg bolognaise/med stew type sauce etc (and a handful of grated cheese). it's so much 'lighter' but just as filling as wheat spaghetti.
i also like them fried with red peppers, garlic and the colourful 'peppercorn' mix (trois bailles?).

A quick summer meal, and easy to make in any quantity, is pasta, pesto and a selection of green vegetables, tossed together. As well as things like beans, broccoli and peas, which can be cooked with the pasta, it's nice to add slices of sautéed courgette too. Any of the short pasta shapes works well.

A popular dish with Wildies at one time was Courgette Fritters. Chinch brought some to a Norfolk picnic once. I've had a look at the Wildie board and am pretty sure this was the recipe, you'd serve them with a salad and something to dip them in probably. I made them once and thought if I did it again I would add a spice or something to add more zing but as with everything, its best to try the recipe as is first.
250g grated courgette, 125g crumbled feta, 1 medium egg and one tablespoon of flour. Mix all together and then shallow fry tablespoons for about two minutes each side.

Courgette,basil, toasted almond and Gruyère tart
Courgette and sweet potato pakoras (bhajis)
Courgettes stuffed with smoked aubergine
Courgette "carpaccio" with lemon and green chiles
Courgette "lasagna" - using the courgette slices instead of the pasta
Marinated bocconcini with grilled courgette slices
Courgettes stir-fried with cumin seeds

I like that one too, Suelle.
I've eaten it many times over here (without the ham) and made it quite a few times too, but I didn't realise it was an Australian classic!!

I think the tricky thing is finding recipes that use a lot of courgettes in one go.

Lots of great ideas though.
I am not even a big fan of courgettes, but they are easy and quick to grow, and thus satisfying, so I can never resist. They are not problem free though. Now expecting for the powdery mildew to spread from my sweet peas to courgette plants. I should probably take some precautionary measures.

You can cook them to a mush with garlic and olive oil, that tends to reduce the volume a bit and use up a few.

Courgette soup? Sauté an onion in butter add sliced courgettes and some veg stock. Cook briefly, then whizz with some Philly cheese with herbs and garlic.

madhur jaffrey has a couple of good recipes in the eastern veg cookbook. you can find the courgette 'meatball' recipe online but i can't find the courgette and tomato one - one of our favourites. i think i may have posted it over on wildwood sometime but possibly not if a search doesn't ping it up.
