Freezer raspberry jam
I’ve got a glut of raspberries which of course is great. I was thinking as well of doing other things, of making some freezer jam. I’ve made it quite a few times; it’s quite delicious and very fresh tasting. I haven’t looked for years, but bearing in mind that this is not a ‘normal’ year I wonder if Certo is still on sale. If not, do you think jam sugar would work?

You can definitely still buy Certo. I used this a few weeks ago to make chilli jam as I couldn't get out to buy Jam Sugar. I did wonder which was better value - adding Certo to plain sugar, or buying Jam sugar

how about cooking the raspberries with some apple, for the pectin? but i suppose it depends on how much you're going to make.

I’m not going to cook the raspberries at all. That’s the beauty of freezer jam. I’m going to the BIg City tomorrow and should be able to get some Certo in the large Sainsbury’s. Thank you all very much.

ahh, sorry, not come across freezer jam before. i wouldn't have room in the freezer!

Thank you though. I haven’t got much space but the jam goes into little tiny plastic containers- enough for one batch of scones for instance. I’d far rather do that than make cooked raspberry jam as I make lots of other kinds, and I’m not that keen on whole frozen raspberries.

I've never found any fresh frozen bought berries to taste good at all, they all taste weird to me and have been bin jobs even if eaten quite promptly after purchase so I went back to fresh or tinned. I imagine the sugar as a preservative is like marinating or brining so a different animal once in the freezer.

I found a bag of identifiable 'red' fruit in the freezer - either raspberries or strawberries . I thawed them, strained out the pips, and added to some leftover cream, icing sugar and a couple of shots of Fraise des Bois liqueur and froze it for a tasty ice cream.

My recipe comes from a Katie Stewart book. My beloved Katie died a few years ago but as I don’t want to get into bother with copyright I won’t post it on here. However there are quite a few recipes online.

I decided to have a got at this with strawberries. But clearly little brain today and I added the pectin along with the sugar and lemon juice... An hour later the sugar hasn't dissolved, Should I just freeze it anyway? What a waste of sugar (and pectin, which was hard to get). I am really cross with myself.

Cherrytree, can I ask you, when you leave the jam to stand before freezing, do you put it in the fridge?

No, because it was cold anyway, it went straight into the freezer.

Why not? Is it runny? I make a lot of jam and if some is runny I just shrug it off and say that it’s ‘French set’

It was quite runny and it was cloudy. I am sure it will be nice swirled in rice pudding/yoghurt/drizzled on something.
