I've not cooked properly since the kitchen cupboard incident. (Last night's dinner was muesli.) I was in the middle of cooking when it happened on Thursday and threw away what was half prepared.
Had pan fried cheese stuffed gnocchi for dinner with garlic and butter and smoked oil with parmesan tonight. More construction than cooking. Ditto dessert: bought lemon cheesecake with raspberry couils (and, um, squirty cream!)
I hope to get back on track tomorrow. Any fresh spinach inspiration? So far got no further than cheese and spinach pie (will have to make some shortcrust - no filo etc.) which should be good enough. I ordered the spinach for a specific recipe, but can't remember what it was. Doh.

We made some Chinese dishes on Saturday evening..honey, soy and sesame pork belly, Sichuan prawns, stir fried veg with cashews and egg fried rice. Plus a small quantity of bang bang chicken with some leftover chicken.
Yesterday we had mustard crust roast beef with roasted veg and potatoes, wilted greens, Yorkshire pudding and a red wine gravy. Leftover roast beef for lunch today.
Dinner will be cheesy rice stuffed peppers with a salad.

Uses for spinach ought to be a thread of its own as it's useful with all sorts.
To use spinach up as a star, saag aloo (spicy spud and spinach) is the first delicious thing that springs to mind. Can serve as is, or add a chickpea or lentil dhal as a duo and paratha or naan to mop up.

I made the rice and spinach cake. how about that for decisiveness!
I wasn't going to bother with taking the stalks off, but glad I did as I found a spring of definitely not spinach amongst the spinach.
Anyway it's very nice, so thanks for that KC2.
I love saag paneer. Saag aloo too. Next time...

As it is cold and miserable here today and I wasn’t feeling great earlier, I decided I needed something comforting for tea. I made a vegan cottage pie with colcannon mash topping. Was really nice, I enjoyed it.
No idea about tomorrow, maybe macaroni cheese.

Great, so glad you enjoyed it! We've done it with different herbs and no herbs and always liked it.
The leftovers are great, too

Smoked salmon with fennel in a cream sauce with penne last night. Today is wet & miserable & I'm thinking of doing bangers & mash with a puy lentil concoction

OH concocted a delicious supper last night, cubed and roast sweet potato with lots of cumin, with a spinach, za'atar and lemony sauce with a couple of spoons of yogurt stirred in. There was some oldish spinach left at the bottom of the bag that wouldn't have been good for a salad any more. We wished he'd made the whole kg of sweet potatoes!

That sounds lovely . I bought some za’tar the other week and cooked salmon with it . I think sweet potatoes roasted with spices are always lovely . Sometimes I add slice of halloumi too for a protein hit

I think some people just find them too sweet , and I don’t think there’s a lot you can do with that . Never boil them they turn horrible . Suppose you could make soup with them , I like it with coconut milk and Indian spicing .
I normally roast in atraybake thing . As I said spices work well as does cheese . Normally I’m pubs , I tend to go for the sweet potato fry option rather than normal chips as I find they can be a bit disappointing

Ha, I guess you either like them or you don't!!
We like them any way, baked, roast, soup, mash, we have them at Christmas in Thanksgiving tradition.
Soup with coconut milk is another great combo, as Amyw says.
There's a wonderful salad in Claudia Roden's Arabesque with spices, olives and preserved lemon.
