Thanks for the very interesting article, PP! We are lucky over here that we can get unwaxed lemons in supermarkets. I can get a net bag of 5 unwaxed lemons from Asda.

How nice it would be to pick them from the garden! I love lemons (and yes, how lucky we can get unwaxed ones!).
I thought that the sort of lemons used for preserved lemons were smaller.

Lovely recipe, I've never thought of making my own preserved lemons. I have some in the fridge, but am not that imaginative in their use. That article gave me a few more ideas.
I always keep lots of lemons & limes in, I use them so much in savoury cooking. I also like the excuse to make something sweet every so often if I have any getting really old. Usually microwave lemon curd or lemon drizzle cake. Yum.
I miss the sight of them in the fruit bowl, but they do keep so much longer in the fridge. I guess the oranges, pink grapefruits & melon would also keep longer that way. I only put them in the fridge if part used. My fruit bowls will be empty at this rate! Does everyone else keep citrus in the fridge?

I keep citrus fruit in the fridge because I think it does last longer but it can makes the skins tougher.

Only yesterday I got one of those 1001 and tips for doing anything ... Yesterday it was how best to keep lemons .. a comparison was carried out between those left in the fruit bowl, those put in the fridge uncovered and those kept in the fridge sealed in a plastic bag ... seems this last one was the best

I quite fancy making preserved lemons , sounds very simple and they are so expensive to buy .
I love lemons . I think lemon tart is a very elegant dessert. A squeeze of lemon seems to give that certain lift to a lot of dishes

Yes, I keep lemons and limes in green bags in the fridge, even unwaxed citrus keeps for ages

Makes such as Belazu do use very small lemons. I did read about them once, but can't find the information now about the variety.
I did attempt to make them once, but I didn't like the look of them, so threw them away.

I have never had any luck making preserved lemons despite using ripe, unwaxed lemons.

I happen to have a jar of PL in the fridge and I like the look of that custard tart in the middle picture Pinned for another time when the rhubarb frangipani tart has been eaten. Thanks for the pointer.

I've tried 2 ways with preserved lemons: salted water, and olive oil.
The salted water was by far the better way. Delicious lemons - I used them up so quickly, usually with baked fish.
But I haven't made it just with lemon juice, as the article says.

When the lockdown began, I picked about 3 kgs of lemmings from a tree in the garden, so decided to make 1) preserved lemons 2) Madhur Jaffrey´s sweet/sour lime pickle and 3) a lemon cheesecake. 4) A Cuba Libre
The preserved lemons were easy, and I´ve now tried them. Wonderful! The lime pickle has yet to be opened; the lemon cheesecake disappeared in the space of a few days. The Cuba Libre was just the thing for a hot afternoon.
I particularly like lemon juice on lentil dishes - somewhat reminiscent of the famous "Dal Soup" from back in the 70s!

3KG of lemmings eh. Cruelty to lemmings I reckon...
On the lemon posset front I did some using up of cream going out of date, old lemons & some stale biscuits. It was really good.
I put an amaretti biscuit in the bottom of each ramekin, sloshed over some elderflower liqueur & then poured on the hot lemon posset mixture. They were soft amaretti, not crunchy ones, hence why they hadn't been used up, but it was surprisingly delicious.
