I´d probably go for goat cheese here as a substitute - that lovely acidity would work beautifully.

I think I may have just eaten mine this morning! It was defrosted frozen fruit salad mix (cantaloupe melon, strawberries, apple and a couple of black grapes), topped with fat free Greek yogurt and some of my homemade muesli sprinkled on top. The muesli is made up of All Bran (Asda's version!), oats, pumpkin seeds, mixed chopped nuts and some sultanas. It was really refreshing, even if the fruit layer is slightly 'unfoodie' !
I have also found out that the All Bran has a satisfying crunch, which may alleviate a craving for crisps if i get one following my diabetes diagnosis. I will, of course, have to restrict the amount I have. All is going well with that btw! It's been a month now and my palate has changed already. I can no longer drink tea with milk in because I find it too sweet. I've also gone off pain au chocolat for the same reason. I had a small piece of one yesterday as it was a colleagues birthday and my blood sugars were a little low. Six weeks ago I would have eaten a whole one no trouble, but now !

Good baked beans ie homemade ones, simply don't feature among the dishes I like to eat at breakfast. whoever makes it! Neither do pancakes, hickory smoked bacon and maple syrup.

I am happy with maple syrup on porridge but it goes nowhere near my bacon!

I rarely bother during the week, although I do sometimes treat myself to an avocado & halloumi muffin from Leon.
I love breakfast at the weekend though, normally something savoury. We enjoy shakshouka from time to time, or tofu scramble, or a veggie fry up. At the moment though, we’ve had a few ‘hash’ type meals with fried potato mixed with a variety of different ingredients. I generally make it quite spicy and include peppers and onions, but it really depends on what we have in.
I recently made a ‘chorizo’, bean, tomato & feta egg dish that was in a magazine. Sort of shakshouka style I guess. We really enjoyed it https://www.deliciousmagazine.co.uk/recipes/breakfast-eggs-with-chorizo-avocado-and-feta/. I used some soy chorizo I bought in the US.

2 over easy eggs, ham and cheese omelette with onions, 2 slices of toast and a blueberry muffin. Not something i would do every day but it was dee-lish. If I felt extravagant, I would slip a piece of parma ham between the the lasted buttered bread and the hot egg to warm up the ham. A few flakes of sea salt on the eggs and you have a mini egg Sammie.

It looks good Mark. I sometimes make cheese omelettes, but never with onions, which would go very well with it.

Why would you have fried eggs and an omelette together , then a muffin and toast too ? When I’ve been to America before , their breakfasts are huge , bigger than us have for dinner?

I occasionally make cheese omelette with finely chopped onion - not for breakfast though (I rarely eat it).

My breakfast is usually coffee and two ginger biscuits. However I'm a big fan of all-day breakfasts, any time after 11am

Couldn't possibly manage fried egg and omelette with toast and muffins all on the same plate. I hate overloaded confused plates of food.

I agree about the 'over easy' egg. How come your yolk didn't burst as mine always does?
For easy brekkers this morning I had two buttermilk pancakes, toasted with some maple syrup. Bought from M&S, not home-made.

Bought some tomatoes which were very hard and bland, so slow roasted them last night with thyme and garlic. Had some on toast this morning with a peeled soft boiled egg.

Looks nice Mark, although I would opt for wholemeal toast if available.
