It wouldn't be known outside Provence probably but calisson ice cream is popular here. A calisson is a sweetmeat made with a base of ground almonds and confit meon - a bit like a marzipan paste and topped with hard white icing.

One of my faves is Nigella’s Salted caramel Bourbon ice cream. Dead easy, very calorific but delicious

I made a rhubarb semifreddo once which was amazing . Can't fir the life of me remember where from though .

Raymond Blanc gives one in his Recipes from Le Manoir aux Quat’ saisons ... maybe that’s the source ?

Am having a few days in Bath this week and walked past an ice cream shop advertising a Prosecco and mandarin sorbet , which sounded lovely . May have to revisit tomorrow to see if they have anymore exciting flavours

And I though Howard Johnson's mind blowing the first time I went to Florida!
I have made a bloody Mary sorbet several times - lovely inside a half avocado. I have also had avo ice cream - ok but rather bland.

Very sad to see that the Coromoto ice cream shop is currently closed due to supply shortages. I do hope the proprietor survives somehow otherwise meanwhile, but I guess he won't be the only one or business at the moment. Ironically, everyone could probably do with an ice cream to cheer them up.
I probably go for rum and raisin most often, though mocha chocolate is a close second, followed by pineapple (assuming not synthetic taste). Hardly exotic, plus I'm fond of drizzles, Flakes and sprinkles. Clearly a no hoper.

Incidentally, I recall basil ice cream was a must have cheffy thing about five years ago. Is it still around?
