You´re right Jeral.
Although I actually made them in time for the guests to arrive - and they all arrived late. That´s why I re-heated them. HATE cold croquettes!!

Yeah, it's good to have a Plan B isn't it if you don't want to be eating at midnight I'm a night owl, but larks can start falling asleep at 10pm I find.
Member 461's ham croquetas could well be eaten for breakfast though... Hopefully a bit of left over veg curry might be in the fridge too

Jeral,
Thank you for the lovely compliment ..
Actually the best time to eat croquettes, is approx. 12pm mid-day at a Tapas Bar with a cold beer or a glass of white wine ..
However, breakfast, well, I have tried it ! However, I do suggest a Spanish Omelette ( Tortilla Española ) !! Could be a lovely sandwich on a baguette or bread of choice ..
Have a lovely weekend ahead ..

Very good video, Gill.
I was a little surprised at the quantity of milk, but then, when the lady said: " Leave them in the fridge for 24 hours", I understood where she was at.
Missed the actual recipe, however.
Is it a litre.
I have her putting 150g flour : 1ltr milk. I'm particularly impressed by her management of the flour.
The recipe notes I made were, oil for frying, onion, garlic and parsley.
Salt cod soaked for 30hrs - that's a day in my book. 150g flour, 1ltr milk, salt to taste considering the salt cod.
That's my notes when I made it last time.
I like the smooth blitzing with a blender, as I do enjoy a brandada type texture.
Although like you, Member 461, I'm not absolutely smitten with salt cod.
The last croquetas I made were carrot ones.
From an Italian cookbook.

Gilt The Painter,
I too like the "brandade " texture, of the bechamel ..
I normally use Iberian acorn fed ham however, my parents make from fresh cod ..
The whole family is not too smitten with salt cod ..
Never had Croquettes with a veggie filling however, I have a recipe for spinach with bechamel croquettes ..
One day, I shall have to try it ..
