(green) chilli jam
I harvested all the rest of my chillies yesterday and have quite a lot of green ones. I have already frozen red, yellow and purple ones and dried assorted red ones and was wondering what I could do that was different with the green ones.
Green chilli jam seems like an option. Has anyone made it? Is it worth it? And would it be a big mistake not to remove the seeds and pith?
I know I could just puree them and freeze... but don't really want to.
I am also wondering if I could make red chilli jam with some of the frozen chillies.

I have made Red chilli jam several times and I always remove the pith and seeds - mainly because the seeds float to the top and the pith is very visible too. It just looks much nicer if it is clear and without both these.
Edited to add: another reason to remove the seeds is that they are quite annoying to keep finding them in your mouth

I tend to remove chilli seeds from many things, they do get between your teeth!

Fresh chili, green or red, always freezes well whole and handy for adding to dishes where you need one or two for flavour. Prefer to freeze whole and chop or puree as needed for a dish. I buy fresh chili often but often toss in the freezer if I don't think I'll use up soon enough.
Red or green chili are both good for jam/chutney either separate colours or mixed. I leave in the seeds as they add flavour and look nice. I've never found seeds to add significant heat - the flesh and sometimes the veins and seed pith at the top determine the heat level IMO. Depends on the variety.

This is a good tweakable chili jam recipe that also has sweet/bell peppers which temper the heat and can be used with either red or green peppers and chili. The lemon helps it set - I use a full half lemon and often just juice the lemon, add the juice to the liquid then slice the lemon skin thinly and leave in or just slice thinly without juicing for texture. I sometimes use shallots or leave out the onion completely. I also like to add 60ml white vinegar for extra tang and keeping qualities. I often double the recipe. !/2 cup sugar (I use raw) is 150g but use a bit less at 125g.

I make Nigella's red chilli jam quite often and I always leave the seeds in.

I don’t think I’ve seen mustard oil in a supermarket. Do I need a specialist supplier?

it's common in asian supermarkets, usually labeled not for consumption - as a safety get out. i don't know what you'd use it for otherwise!

The pickle appeals too. Most of my chillis have gone in the freezer. I assume i can use these for either.

I used to get mine from local Asian supermarkets but must admit there's a dearth of such supermarkets where we live now. Last few times I've made it I've used rapeseed oil instead. Not quite the same but perfectly acceptable in my view.

Indeed it is WolfGirl! You should have no problem at all in picking some up. If you're going to be in the town centre the easiest option is to head up Broad Street and Cheapside to the Oxford Road (pass the Penta Hotel on your left) and after a couple of hundred meters you'll find a fab Asian supermarket/greengrocers (I'm sure it'll still be there) where you'll certainly find mustard oil.
Give my love to Reading. Will always have fond memories....

Well I found the store you mentioned. Very easily after your excellent directions, Sea.
Many choices of mustard oil and all cheap as chips. It’s the first time I’ve seen fresh rambutans on sale in the UK too.
I’m not sure if I’ll get chance to make the pickle before Christmas, but if not I think it will be a great task for a cold January day.

I haven't been to Reading for years but have very fond memories of playing in some opening concerts at The Hexagon. What a wonderful theatre. Used to play for the semi-resident orchestra Moods in Music. Happy days.

Oh fantastic! Glad you found it OK WolfGirl. They have the most marvellous selection of exotic fruit & veg haven't they? I used to buy breadfruit from them sometimes amongst other things. The building where I worked is just up the road so it was really convenient. Thanks for waving to Reading for me!

It's a nice recipe is that PP. I often make a batch for Christmas presents. It looks so festive.
