Chicken and veg soup, using the stock from the chick. Chicken and peanut lasagne. Pasta with a chicken and mushroom cream sauce. Chicken in the hole (like toad in the hole).

Good recommendations, thanks a lot, all. Risotto is lovely, love coronation chicken and chicken pie, and I'll be making soup from the carcass and bones too.
And I have to ask about chicken and peanut lasagna - very intriguing. Pls do tell.

It's the simplest thing to make. Make a béchamel sauce and fold in chopped pieces of cooked chicken. Butter a lasagne dish and layer "no pre-cook" lasagne sheets, chicken in sauce and roughly chopped salted peanuts mixed with chopped fresh parsley. Top with grated cheese mixed with breadcrumbs. Cook at about 200°C for 20 - 30 minutes.

About 3 days late to the party, but with that chicken left over, I´d make a "polvorosa de pollo".
