I have got in the fridge ....
chicken breast, leeks, broccoli, mushrooms.
My first thought is to bake the chicken and produce a mushroom sauce.
With baked parmesan leeks, & steamed broc.
Dear oh dear, I've turned into a very boring meat and 2 veg cook. When did that happen.
Any other ideas?
What have you got in your fridge that really needs cooking?

How about a chicken & veg pasta bake thingy? But I think your Plan A sounds lovely!

Plan A sounds a real treat to me! Otherwise a stir fry or pie filling.
Of the things that need eating in my fridge, I've rather too much spinach and Brussels sprouts plus a very large courgette which is almost as big as a marrow. Oh, and one cold sausage. Thankfully, everything else will keep a bit longer! I'm not overly keen on sprouts in soup but think that may be the answer.

I too think plan A is fine.
Otherwise a chicken pie (with leek and mushroom sauce ) and pastry topping.

Thank you for the suggestions.
I think Tony wants a chicken and mushroom soup - so I'll just do what he wants. I'm not particularly hungry after my vaccine, so I don't mind plain fayre today.

That looks interesting! Thank you. I like stir fried sprouts with various flavourings but thought of soup as I've got a whole bag which will go off before I could reasonably eat them. Maybe a couple of dishes then blitz the rest!

I was going to suggest a French chicken sauté of tarragon chicken with leeks, mushrooms, mustard and cream... But the soup sounds lovely.
We have approx 30 brown onions which need eating. I know they last ages but we keep getting more in the veg box so we really need to make a dent in them. We’ve not made French onion soup in a while. I’ve also toyed with some kind of chutney.

This Onion & Mustard relish is very good:
1kg (2.5lbs) onions
725ml (1.4 pt) white wine vinegar
75g 3oz) mustard seeds
zest & juice of 1 orange
1tsp salt
562g (1.4lb) soft brown sugar
3 red chillies, finely chopped
Thinly slice the onions (I find the grater on my food processor good for this). Put in a pan with vinegar, mustard seeds, orange zest and juice and salt.
Cook 15-20 mins over a low heat until soft.
Add sugar and simmer over a low heat until thick (the sugar caramelizes and there is a stage when the mix does become thicker).
Add the chillies and cook for 10 mins.
Pour into warm sterilised jars and cover whilst hot.

Do you have a recipe you like for that? OH is always very happy with meat n two veg and savoury main meal soups. Such a dude It's me who likes pizzaz chez nous. I do make separate meals sometimes to satisfy my pizzaz and spiciness cravings.

1) Creamy Korma-style chicken with mushrooms & leeks, plus steamed broccoli with fresh green chiles and lemon juice, OR
2) Indonesian style Chicken with coconut milk & mushrooms; stir-fried broccoli with leeks, fish sauce, a bit of palm sugar, chiles and tamarind . Sweet & sourish.
I never was a meat & two veg bloke.

GillthePainter, I was stumped by your mix so, epic fail, would have used the leeks for soup, made tikka'd breast then cut it into medallions for a sandwich and make broc/mushroom quiche with thin slices of red pepper or chili if liked.

this is the recipe i use, jeral, from pat chapman's, curry club 'restaurant' recipe book. good and crispy, not dense.

Substantial leftovers from a large 2kg roast chicken from Friday night that we've had twice, which is fine as it's a really beautiful organic one so no probs for multiple meals. Most of the breast left ... possibly tacos.
What do you like to do with chicken leftovers or think could be mighty interesting and worth trying?

I sometimes make a retro Chicken a la King, I usually have most of the ingredients except mushrooms in the fridge

Essentially it is cooked chicken in a cream sauce, usually with sliced mushrooms and peppers sometimes with sherry, served with rice or to be truly retro, in a vol au vent case. Lots of recipes on the web, all American, I just use them as a guideline

I'm afraid we're very boringly keen on chicken risotto!! Especially if you've got the stock from the same chicken!

The first thing that sprung to mind was coronation chicken . Purely because a man I support had a coronation chicken roll the other day and I keep thinking how nice coronation chicken is and I must get round to making it .
The other thought is a pad Thai as something a bit more exciting . Failing that a good Caesar salad , loads of anchovies , Parmesan and cook the croutons in any leftover chicken fat

I mostly make chicken risotto with leftover chicken breast, unless we have it cold in sandwiches.
Or if there's leg meat too then usually chicken & mushroom, or leek topcrust pie, if I have puff pastry the freezer.
