I set out to make the HFW Spinach cakes discussed on the 'Foodies in the News' thread.
Just posted an answer over there, EM!

A simple dinner tonight, a regular when we're not in the mood for cooking.
Sea bass fillets with sauté potatoes and a mixed salad.
I haven't been told if it's with caper vinaigrette or mayo.. either is fine with me.
J is in charge, I worked today and he has been busy in the garden.

I had a baked potato with sweetcorn, extra mature cheddar, a fairly modest amount of oak smoked garlic butter, lots of black pepper. I really enjoyed it. The potato had a really nice texture and flavour. Quite a sweetness to it, although I've not been eating much sugar for the last few weeks, so I suppose I am getting to the stage where I notice it more.

Blackberry souffle sounds wonderful! I've only ever made lemon or orange fruit ones which are a bit different. There are so many recipes online - I didn't even realise it was a 'thing'!

I’d never had it until I tried it at this particular restaurant last year. I ordered it every single time we went
It may need to wait until next week though...it’s OHs birthday this weekend and he’s requested tiramisu which the 6 year old is making. The main course will be seafood spaghetti marinara.

Wednesday we had Oriental Salmon Steaks which originally came from a Waitrose recipe card dated 1995! Stir fried veg accompanied. Then last night we had
Piri piri chicken with herby wedges and roasted vegetables.
Tonight we have a couple of skate wings which I’ll serve with a salsa verde, carrots and probably some sort of roasted potatoes.

Today the Fish Man arrived with two large sides of salmon. Cut them into fillets ( about 150 - 160 gms each) and stuck them in the freezer. We´ll have some for Sunday lunch, although I don´t know how yet.
Tomatoes and carrots were on offer today, so I bought loads. I made a carrot & tomato soup, with fresh fennel, basil and oregano. The rest of the tomatoes will probably be converted into oven-dried tomatoes and a good old basic tomato sauce for pasta.
the picture is a bit fuzzy because the soup was still steaming when I took the photo.

Just had a look - it's just my kind of thing so I think it'll be on the menu very soon!

We had the Lentil and vegetable soup with preserved lemon tonight, but with less liquid as I didn't really want "soup" https://www.theguardian.com/food/2021/f ... achio-cake
It was delicious and we made the Caramelised butternut squash fatteh with za’atar last week, which was also terrific.

That does sound delicious KeenCook!
Lots of fish and seafood for us this weekend. Yesterday we had turmeric chilli lime squid with chilli jam and salad. Today we’re having crab risotto (with mascarpone and lemon) with samphire.
The tiramisu lasted Friday and Saturday but there are cupcakes left plus a carrot cake made by mil so we have plenty of sweet options.
Breakfast this morning will be buckwheat pancakes with spinach, ham and cheese. On that note, we’d all better get up I suppose

We're going to have the fatteh and (frozen) BNS again tonight
We skipped last week's supermarket delivery and I'm determined to use up what we've got left rather than going out and getting more stuff from the end of the road before the next delivery on Wednesday ... quite a challenge, a bit like Gill's fridge thread

I just dug some haddock fillet from the freezer and cooked them the way Sabrina Ghayour made her crispy cod on Saturday Kitchen

I didn’t do the rest of the dish, I would again, but the fish was very good

I like the sound of those cod wraps.
Lunches so far this week have been pissaladiere with a rocket salad, and corned beef hash with poached eggs, spinach and spicy ketchup.
We’ve had a smoky sausage casserole with beans, butternut squash and kale. We’ve also had a pasta bake with aubergine, tomatoes, basil and ricotta.
I made a chunky beef chilli today so we’ll have that tomorrow. We can never agree on sides so we will probably have them all! Leftovers can be eaten as lunches so it won’t go to waste.

I like the sound of the cod wraps too.
Tonight is a cottage pie mix from the freezer, probably served with a baked potato and the last of the brussels tops.
J is gardening and I am feeling meh so under the duvet.
It means we get a proper dinner with minimum effort.

I watched the episode of Saturday Kitchen with Sabrina Ghayour and also liked the look of the cod wraps. I’ve been to the supermarket today and managed to get everything to make them, plus the salsa and chips, so I think that will be tomorrow’s dinner.
Re: What's everyone cooking this week? 2
Cod wraps consumed. They were delicious. There seemed to be a lot more prep involved than seemed to be the case on tv. I really loved the sweet potato chips. If anyone else has a go, next time I wouldn’t put lime juice into the mayonnaise as it made it quite runny and was dripping out of the wrap as we ate. I think probably the lime zest on its own would be sufficient.
It’s a keeper.

Tonight was a delicious risotto, made with smoked bacon, broad beans and parsley.
J came home with a couple of red mullet today, so that's tomorrow sorted.
