Thank you for being the 'guinea pig' Kacey! That's really interesting as I'd thought they might be quite heavy.

There's a recipe for vegan waffles a few pages back on this thread but this is the one I used yesterday:-
1.5 cups of vegan milk - I used soya milk, I upped the quantity too to nearer 2 cups as I felt the batter was a bit thick
2 tsp cider vinegar
2 cups plain flour
1 tbls baking powder
1/2 tsp salt
1 tbls brown sugar or maple syrup
a quarter cup of melted coconut oil
1/2 tsp vanilla extract
Sift all the dry ingredients in one bowl and mix all the wet ingredients in another, then combine to make the waffle batter.
I omitted all the sweet stuff and added mixed herbs, paprika and chilli flakes

I don't see why not, I imagine you could make thick American style pancakes with the waffle batter

I was somewhat surprised today to see a promo for Hellman's Vegan Baconnaise - I'm almost tempted to try it, so off the wall

Over here they´re also promoting Hellmann´s Avocado Mayo. Does that exist in the UK?

Might work on pasta
Chef at a local pub invented a pasta salad to bulk out the sides at a bbq / buffet thing, equal parts of Hellman’s Mayo and Bick’s onion relish on tepid pasta and left to cool
Really pretty good - he did it once as an emergency, but repeated many times

Hi folks. Does anyone have a vegan or veggie recipe for beetroot soup please? Ta.
I have some troots in the fridge and thought borscht, well except for the beef stock and wondered if anything is added to compensate for it like soy sauce or balsamic vinegar or it's just replaced with veg stock.

have you tried mushroom stock cubes? i buy the 'winiery' ones from the local eastern european food shop. they give a good, deeper flavour than other veg stock cubes/powder.

Ah, no, I didn't know mushroom cubes existed so thanks scullion I'll scout them out if I can. I have toyed with getting mushroom ketchup, deterred by £5 p&p. I imagine either would work (whichever I can get).

Kallo do a good mushroom one too, and a nice rich French Onion, both vegan and in most supermarkets

That sounds like a good suggestion, scully.
Just at a guess I reckon a tiny tsp of marmite would make the grade as well. Just fry up some onions in olive oil, add the cooked beets, water, marmite, salt & pepper - ready.
