I used to be able to buy Gouda with cumin.
Haven't seen it for years.

The first thing Gouda cheese brought to mind was hot dogs in rolls.

I checked I wasn't dreaming and the first recipe up uses "1/2 cup shredded cumin Gouda cheese".

Leeks make good stuffing, e.g. this leek/garlic/pineapple/thyme one for roast pork, or for white fish side:

as 'fajitas' is a dish in itself i'm just going to use the tortillas in my form of quick quesadillas - with cheddar, onions and sometimes a bit of pickle.

Red Pepper Burger relish

6 tomatoes skinned and chopped

6 peppers chopped

4 onions chopped

¾ cup sugar

½ pt cider vinegar

1 tsp salt

1 tsp celery salt

4" cinnamon stick

1 tsp allspice
 (pretty sure i used whole and put all the whole spices in a spice ball).
8 cloves

1 tbsp mustard seeds

1 tbsp chilli flakes


Bung everything in a large pan and bring to a simmer. Turn right down and cook gently for 3-4 hours until everything is reduced and had become thick and jammy. Remove whole spices and put in sterilised jars whilst still hot.
