Re: What's everyone cooking this week?
Lunch was celeriac soup.
Dinner will be hake with salad and baby potatoes.
Feeling the need for some simple stuff today.

Thanks, ZC.
I just checked on Asda online - I've got an order coming on Wednesday - and they suggested kiwis as a sub for physalis ... which is obviously not quite the right fruit to begin with ....
Maybe better to go the citrus route.

No no - kiwis would also be really good, KC2 - didn't think of those but they'd be perfect, especially if still very firm and tangy. Or how about all of the above! That salad's almost a sort of cross between a fruit carpaccio and a kinda sorta deconstructed scallop remojon - which makes hanker after remojon - might have to do one! Do plz post if you make it!

The scallops must be huge if cooked for 3 mins each side! What sort of diameter and depth scallops are envisaged?

Yes, I agree, jeral, we'd definitely not cook ours that long. I'm afraid they'll be Asda frozen Patagonian scallops, which are unlikely to be very large!
Probably American scallops, like lobsters, and apples, and cartons of milk, and you name it, are just huge! When I saw the pic of DS's Christmas spread I couldn't believe how enormous their green beans were!

Tonight is an approximate version of Rose Eliot’s Shepherd’s Beany Pie. The base is black eye beans (canned) cooked with shallot, carrot, garlic, lots of celery, tomato & a touch of herby tomato purée. The topping is half parsnip half spud and a sprinkle of cheese. Cavolo nero on the side.
Then I’ll have my second Costa mince pie with either cream or custard

That pie sounds good, Sue. I’ve got plenty of root veg left so will give it a go soon.
Re: What's everyone cooking this week?
That does sound good , black eyed beans are one of the few pulses I like . Don’t like mash but might serve with some roasted parsnips
Re: What's everyone cooking this week?
Yes, it does sound good, Sue
We're having roast broccoli, a few left-over leaves of cavolo nero, roast tomatoes and anchovies with pasta.
OH is making it as I write

Wonderful sounding food!
We had Polish potato pancakes with pan fried hake and aioli and it was delicious.
Aioli not in the photo as it was on the side with lemon wedges.

I seem to recall that Gordon Ramsay uses scallops in Hell´s Kitchen, and it´s 3 minutes per side. And yes, they look huge!

That looks super-delicious OMCO!
There do seem to be varying sizes of scallop. The ones I see these days seem quite small.

Re: What's everyone cooking this week?
Well, it's all hypothetical now as Asda isn't delivering any scallops today - unavailable - despite them being available when I ordered them and they were still available yesterday when I made the final few amendments
Well, scallops are obviously not going to be our NYE supper!
Instead, we went out and got a COOK Lamb Tagine: https://www.cookfood.net/products/Moroc ... mb-tagine/
Lunch today will be carrot and parsnip soup with coconut, left over from yesterday. And I might well also have a smoked salmon sandwich as we've still got quite a bit of smoked salmon in the fridge and some h-m no knead miracle bread.

Re: What's everyone cooking this week?
Just made my first ever lemon posset!
I wanted to use up half a carton of double cream before it went off. It's in the fridge now so we'll see how it turns out later ...
I used this recipe: https://www.bbc.co.uk/food/recipes/lemo ... emon_85812
Haven't made the shortbread biscuits though.

Re: What's everyone cooking this week?
We´ve got a New Year´s Eve "party" tonight ( 10 of us) and I was asked to make some "snacks".
I didn´t really want to cook, but there you go.
A cream cheese & smoked turkey dip ( all done in the liquidiser) and some cream crackers - thanks to a recipe on here ( from someone I can´t remember - Thank You!), plus Gill´s foccacia and a jar of Caponata.

Re: What's everyone cooking this week?
Well, I have just had a text from the boss to say I don't need to work tomorrow as it's v quiet
That means we will have tomorrow's cottage pie tonight (already made) as I will have time to play in the kitchen tomorrow when J is at work.

Re: What's everyone cooking this week?
That focaccia recipe has been a winner for you, Clive. Dip n crackers look excellent.
Our cheese board (2 types) was a bit odd this year, Herbi: camembert and brie. But it was the Somerset brie that was stinking the fridge out. It's fiercely strong. Too strong for me.
Hope you enjoyed that day off, WWordsworth.
Chateaubriand finally tonight. It's been postponed so many times, but it's ready to go in about an hour.
