Postby Hickybank » Fri Nov 20, 2020 10:01 pm

Pie & mash night tonight but needed a side dish, I had a head of Celery so looked up recipes & found this from Delia. We were both surprised just how good it was. the caramelised Onion worked perfectly witht he Celery. I will definitely be making it again

I am sure I had a Delia recipe for braised celery done in the oven. I added cheese to it to have it as a main. Very nice. (And I am never sure if I really like celery generally.)

ah maybe this: https://www.deliaonline.com/recipes/col ... nion-sauce

It surprises me how many people I know don’t like celery . It’s not on the list of veg I like but always add it in a soffritto when doing a Ragu etc . Also nice as a snack stuffed with Boursin

Braised celery is right up there with my top sides. And celery soup is a big fave here.

I like raw celery and always add celery to meat stews, bolognese sauce and many other dishes where it's cut into fairly small pieces, but I can't stand braised celery. I think it's the texture rather than the flavour.

It reminds me of my Nana Frame. Melts away and you get all the flavour. Good job we don’t all like the same things, although OH is a really fussy bugger as you know but loves it too.

I saw the recipe with cheese and onion sauce and thought I rather fancied it too. I use celery in a Gok Wan recipe for king prawns with chilli, celery and cashew nuts - very simple and very tasty.

I make cheat’s braised celery, as explained by Mrs Vee
Clean celery sticks, season, wrap in foil with a lump of butter and a splash of stock or water
Put in the oven until done which will vary from 45 to 75 minutes depending on quantity and oven temperature

I’m a big fan of braised celery... it’s been a christmas favourite with roast Turkey, pheasants and guinea fowl ever since I married aeons ago. But I cut it into quarters lengthwise so it’s still joined at the root, sear it in butter and then put in a long shallow dish with butter and some chicken stock. Cover with foil and braise for an hour or more, depending on the oven temp.

Well, peoples I’m afraid I’m going to be a virtually lone voice here as I don’t like celery, braised, raw or any other way it can be eaten :vomit . The only exception is that celery salt can enhance certain dishes.

Cheers
NLB :thumbsup

I nearly always have a head of celery in the dew bin. I like it added to a grated cheese and mayo sarnie. I also add it to spag bol. It's good as a dipper too.

Oven might be going on today so may braise some to go with the egg bacon and mushroom pie for supper tomorrow.

I wasn't going to mention it as this thread is for those who like it - but you're not alone NLB! Braised is the worst as both taste and texture are unappealing to me. At school once, when I had a cold and had lost my sense of taste, I finished up everyone's braised celery for them. They were most grateful. Actually, there are several vegetables I much prefer raw to cooked but only really like celery as a carrier for large mounds of things like cream cheese.

northleedsbhoy and Earthmaiden, a comment on the Allrecipes link sums it up perfectly:
"I usually find the taste of celery too outspoken."

<- That had to be the quote of the day for me yesterday :D

My dad liked braised celery. I didn't inherit that gene, though will happily chomp through raw celery sticks.
