Re: What's everyone cooking this week?
Roasted root veg are absolutely marvellous. Roasting seems to bring out all the sweetness and flavour in them. I picked up a recipe from the www which is basically a roasted veg soup - with Moroccam spicing. I love it!
Re: What's everyone cooking this week?
Curry tonight. I'm still getting up at my usual time despite working from home so by 7:30 this morning I'd made a cabbage curry, spinach & chickpea, and a green peppers in gram flour. Also got a loaf of bread in the oven by 8am and I've just sneaked away from my 'desk' to make a batch of hummus with the leftover chickpeas. Wish I was so industrious every morning. Usually I log on here and read the posts from after 9pm the night before, then get side tracked doing a bit of surfing and before I know where I am ......
Re: What's everyone cooking this week?
Shin of beef casserole this evening, with carrots, celery, onions, good beef stock, crushed juniper berries and bay leaves ...large chunks of Maris Piper, the size of roasties, will simmer in the casserole for the last hour or so, soaking up all that wonderful flavour ... to be served with buttery green cabbage.

Construction again... stuffed gnocchi fried in a little smoked oil with sage and wild garlic seasoning, tossed with smoked butter (M&S - not at all smokey alas but nice and salt crystally) and grated emmental on top.
I must cook something properly tomorrow. Not sure what though.

Do you get them stuffed? I don't recall ever seeing them, just either "white" or "green", depending on whether they have spinach in them or not. And I've never made them.

Re: What's everyone cooking this week?
I have made something I’ve never made before - gnocchi
I halved a small onion squash & baked it, baked two small baking potatoes, puréed the flesh of both through a food mill, added seasoning and about 2 cups of flour, and shaped them. (I actually did use cup measure here - the recipe said about 2 cups until you had a workable dough, and the easiest way of doing that seemed to be to add a half cup at a time)
It took ages! But I cooked enough for today and tomorrow and I’ve put a tray to freeze
Had tonight’s portion dressed with a little evoo and Parmesan and some Turkish green beans on the side. Yum.
The kitchen looks as if an accident has happened

... and lots of clearing up to do no doubt!! It sounds a good recipe though.
I marinated a couple of salmon fillets the other day with white miso, rice vinegar and a small amount of sugar and then grilled them in my halogen oven. I served with green beans and tomatoes. I had the other fillet the next day mixed with teriyaki rice.

Tonight is very simple.
Mushroom and bacon omelette with a big mixed salad and a few sauté potatoes.
Probably cheese and crackers later.

Mmm! sounds good Herb....

Today we are having fresh grapefruit and toast for brekkie, cod fishcake in a roll for lunch and he will have the last piece of chicken pie and I will have cauliflower cheese for supper.

Re: What's everyone cooking this week?
We had roasted Romanesco cauliflower and finished up some Nigel Slater lentils and courgettes. Delicious
Slice of boiled fruit cake for puud.
Tonight I think we're going to have our Saturday night treat of a COOK dish from the freezer, either dijonnais pork or duck with juniper berries.

Well, the fishmonger had turbot this morning so I bought a couple of smallish ones.
They will probably be simply fried in olive oil and butter and sprinkled with chopped parsley.

Re: What's everyone cooking this week?
Tea last night was M&S plant kitchen kievs with the last of the romanesco and steamed purple potatoes.
Brunch this morning was a large veggie breakfast. We had toast, square sausage, link sausage, facon, home made spicy beans and home made cheesy potato waffles. My OH also had an egg.
Really full now, tea will be something light

Re: What's everyone cooking this week?
We’ve made quite a few things out of Jamie’s everyday superfood book recently...
- the granola dust
- roasted squash laksa bake with chicken, lemongrass, peanuts and rice
- ginger and chicken penicillin with brown rice, crunchy veg and sauces
- harissa roasted aubergine with pomegranate, pistachios, olives
I got it out from the library but there’s loads I like the look of so I’ll probably end up buying it.
We’ve also made a spiced pumpkin soup and parkin over the weekend.
Tonight we’re having vegetable kebabs with flatbread or couscous, pickled chillies, yoghurt and coriander.

Re: What's everyone cooking this week?
I made my signature dish - Frankfurter Green Sauce (7 herbs)
We had it with chips in the airfryer, and roast pork.
I alternate between having it with eggs, and having it with pork.
Plate pie is one of my regulars. I really enjoy making them.
