I think mine has gone in the opposite direction, I have been looking at what I’ve got and using it up - I’ve probably got about the same number of spices as I has a year ago but a slightly more rational selection
I do have a lot of spices - but I use my spice grinder quite often
A bit worried about the shallow drawer at the top of the freezer which is overflowing with chilliest, galangal etc

The reason many if us have a spice museum is because they are generally sold in such huge quantities. One buys a whole jar of something which requires half a teaspoonful for a recipe and the rest goes into the museum, only to be dug out every few years when there's a turnout. There's a little shop near here where you can buy very small quantities loose which I like - but invariably I end up in the supermarket because its convenient. An awful lot of spices must be wasted.

Wow, interesting. Never seen that before. I looked on YouTube and there are lots of visual demos there. I watched this one https://youtu.be/ZXacDTEo-jI and found his comments on cleanliness interesting and was also interested to see the ready packs of medium. With any form of preserving there are always rules which are useful to know and not always mentioned in articles.

I’m eyeing up Ottolenghi’s mung beans and chard, would like to do something with the beans other than sprouting them

To be honest, the mung bean recipe reminds me of Indian, rather than Iranian food, with a turmeric-laced tarka
I made a Camellia Panjabi recipe for Prawn Patia last week, and in the introduction it said that it was always served with mung dal. Come to think of it, though, "Patia" is a Parsee dish, and the Parsees came from Iran to India 1300 years ago.
