Choux pastry help
Hi all ,
My mums in hospital at the minute ... long story but collapsed vomiting blood last Tuesday . I’m visiting her tomorrow and asked if she wanted anything brought in and she said something like eclairs or choux buns . I thought it would be nice if I made something using choux pastry for her but I haven’t made anything choux related in years .
Any recipes /tips etc? Anything pretty with a bit of wow would ge great as it’s a special treat

I haven’t made choux for a good while either so I’ll leave that to others ... just wanted to wish your mother well. Hope they sort her out and she gets home soon

Last time I tried it was easier than I remembered (EDIT: reading it again, looks like I'm lying there!). Here's a link back to that "Croquembouche" thread.

Thanks Suffs that’s very kind . Thanks Sakkarin for the link too , I think the croquembouche might be a small struggle to get into the hospital !!

Oh Amy, sorry to hear that
I've only made it once in my life and it wasn't a success, so I'll leave it to the others too I think it was suppposed to be filled with something cheesy? They had a name but I can't remember. Must have been 35 years ago.
I'm sure that whatever you make will look stunning, do post a pic

From what I know of my friends who are in nursing and doctors as well, you’d never get it past them .... all you’d have left is a sticky plate.

Haha I was only joking Sakkarin . Been reading up about it and quite a few interesting tips/techniques

AmyW - please accept my best wishes as well .
I haven't made choux for a few years either. I know I once made a mental note to be sure to let out all the steam and give the middles a chance to dry out a bit which has proved useful.
I don't think you can go wrong with eclairs or buns with cream and chocolate. Most people would consider that a treat!

I make little gougères occasionally but haven’t made sweet choux in years
My top tip came from a tv cook, can’t remember which, but it’s simply that if you tip the mix out of the hot pan into a cold (room temperature) Pyrex or ceramic bowl and give it a token stir it will then be the right temperature to beat in the eggs, no brain required
I always beat the eggs a bit before adding quite gradually, and I seldom use all the last egg, sometimes I don’t need it at all, most recipes seem far too wet - either that or Serj sells monster eggs
I do hope your mum gets better soon Amy, I’m sure it will be good for you both to have a visit and catch up

Ha! Tonight's Australian Masterchef, they have to cook a classic dish from the 10 choices provided, number 10 is Croquembouche!

Well I did a test run of Mary Berry’s recipe and they worked . They’re all different sizes/shapes but for a first attempt , they rose and are nice and crispy on the outside

Fingers crossed for your mum Amyw. I'm slightly surprised you'll be allowed to visit given how sensitive hospitals are but great if you can, staying masked up I guess?
Will they let your mum eat choux buns with cream? They're rather dry and tasteless without a filling. Maybe apple sauce or jam instead if not "sickly" cream?
Could buy or make a Madeira or angel cake if poss as well just in case simply because they ought to be fairly neutral/harmless depending on what's wrong of course. (I like to have a Plan B.)

In our local hospital each patient has one designated visitor for the time they are incarcerated. In practice it was a bit more lax than that. Not masked up at all and they didn’t even seemed to be bothered about signing you in.
