I've mentioned I've had horrid food reactions for a couple of years here, sort of out of the blue. Symptoms akin to food poisoning for 7 days long, every 2 weeks or so, in effect.
But having talked to a friend who has a very specific illness, something hadn't occurred to me. She said my symptoms are exactly like histamine intolerance.
Never heard of it till now.

It's been a lightbulb moment, going from life affecting difficulties where I've not been able to go out or book anything without a view to cancelling - to, I think I've cracked it.
Yeast/ breads. It's not gluten intolerance tho.
(And I don't know if homemade sourdough is OK yet - I might try when I'm a year clear).
Undiagnosed, but I've been free of problems now for nearly 3 months having given up bread.

She also said soya can be a culprit for histamine intolerance, so my drive to sub so much with soya (phytoestrogen attempt) has reversed too recently.

So, my jolly question. Bearing in mind, I'm fine with flour I believe.
I'm looking at Tony's beautiful ciabatta rolls, and will not have them.
I'd normally poach some eggs and toast those rolls!

So what can I use instead? I really cannot think of an alternative to toast. I dare not try crumpets for example.
Any suggestions to a substitute where toast or bread rolls is perfect?

Ooo, nice suggestion. I adore oatcakes (the ones that don't taste a bit fishy - some brands are better than others).
Of course I could make them too.
I'm fine with oats & flakes, and have them most days with almond milk for breakfast.

Potato cakes as an alternative if you’re fine with flour? Or US style pancakes/drop scones? Staffordshire oatcakes are good too.

For poached eggs I’d think Irish/Scots potato scones would be a possible answer, not tried them with poached eggs but they are great with fried so should work

BUT histamine sensitivity needs a proper diagnosis and needs to be recorded in your medical history. Please get that done, it’s so easy to get it wrong

If you're OK with flour but not yeast, is soda bread an option? Scone doughs? I've not heard of this condition either, so if my suggestions are nonsense I apologise in advance. :D

That would also open up the option of various flatbreads & anything leavened with SR flour.

If Baking powder , bicarb and yogurt/ buttermilk etc are OK I've found a couple of Polish recipes for buns/rolls and even a loaf.

If approved - I'll translate.

Just what I was thinking BM.

I only have bread for a treat (not because of allergies but because I am too greedy when I have it). I find various flatbreads at times when bread is required (usually with eggs) very handy and quick. There are the sorts made from plain flour and rolled out thinly and cooked in a pan and all the SR types which puff up a bit and can be scone-like and cooked on a griddle or in an oven.

As well as Scottish oatcakes there are all the regional variations of the Staffordshire oatcake.

I'll pass on the Staffordshire oatcakes, as I think they are made using yeast. They might be fine, if I can use wild yeast later on of course - I've still got some in the freezer made from apples.

I love the thought of potato cakes. I can even dunk them in soft boiled eggs.

I was brought up on drop scones, Smitch. An excellent suggestion. And scones in general Badgers.

my doc is excellent, and with detailed tests over the last 2 years or so, has ruled out a lot of things. He's an oncologist specialist, so that's been dismissed firmly very early on. As I have no other pre-existing conditions, it's been easy not to attribute this mystery to diabetes, or kidneys for example.
Our latest state of play was to venture into heart monitoring, but I've been perfectly normal/ low for the 3 months now. So no time wasting research on that score.

I'll give it 2 months of being symptom free, then contact my GP again to progress my self diagnosis if needed. But if giving up bread is the specific help I had hoped for, I'm not too fussed if he doesn't want to go any further.

And look forward to steadily reintroducing those forbidden foods: onion, wine, gluten pasta, potato, dairy, nuts, sugar, chocolate, spinach & green leaves, lettuces etc.

I feel sure I'm OK with bicarb and baking powder. As scones haven't induced an episode ever.

AM, there are a few flatbreads around, aren't there. At the moment, all I can think of is chapattis.
I must have an explore of other cultures.

Gill, that’s great, the initial post just sounded a bit diy, and knowing how hard these diagnoses are even with testing that always worries me :newhuggy

Why don't you start a Polish recipes thread, Maria? I don't think we've had one before, although I've made a few Polish dishes over the years, they've tended to end up in the "What are you cooking today" thread.

Sue, you're absolutely right in your suspicions tho. It is a DIY diagnosis, and as such, I still don't know if I have a real histamine intolerance.
First up, potato are on my shopping list for those tayto scones ... I shall report back.

As an alternative to poached eggs on toast, whilst reading your initial post I was thinking that huevos rancheros have a similar vibe, lots of Latin American options. Billy Connolly once described Mexican food (or at least what is served in Mexican restaurants) thus - "Whatever you order, you get the same thing, just folded differently". That's a bit unfair but rings sufficiently true for the joke to work. :D

There are all the Middle Eastern possibilities too of course. I have made Chinese steamed buns using SR flour, the recipe was in the first Ken Hom BBC book.

That's an excellent suggestion. Quite often Tony just wants cheese on toast for dinner. & I'll always have just rice n chicken/ prawns myself.

Tattie scones definitely as there is so much you can do with them. Frozen or instant mash works very well for them if you fancy a short cut.
My friend's adult son has had Crohn's disease since early childhood. While gluten free options are easy to get now it wasn't when he was first diagnosed. They discovered very thin omelettes work fairly well as wraps if you fancied trying them.

If there's a yeast problem it may or may not be helpful to know that when a friend had similar (seemingly related to a post viral condition) he found he could no longer tolerate champagne as that gave him similar symptoms :shock: :cry:

Exactly, Suffs. I got it when I had prosecco, cava and champagne (not on the same night :wino ). As I don't drink wine, I knew it was the culprit each time.
The Taittinger for Christmas has been put on hold in the garage for when I feel confident I can have a glass.

Plus no-alcohol beer causes the same. Can't touch it any more.

They looks great, Smitch.
I'm going to have a great time trying out these savoury treats.

Liketocook, anything eggy I will hoover up. Egg might just be one of my favourite main ingredients to work with.
I adore them - even snotty poached eggs :o
