Cream cheese stuffed into those jalapeño chillies, bread crumbed and cooked. We had some for lunch So jalapeño chillies

Nachos is a Mexican snack dish made with crispy deep fried tortilla chips or totopos topped with melted cheese and variousnesses such as chili or spiced meat bits and often served with a side of guacamole made with avocado with tomato, onion, cilantro, fresh jalapeno, salt and fresh lime juice. Yum.
Homemade corn tortillas are very good, very easy and well worth the effort. I don't have or need a tortilla press, simply roll out the dough between two pieces of plastic (which I save for that use) to the size of an appropriately sized small side plate, remove the top plastic sheet place the plate on the rolled out dough and cut a circle, discarding the extra dough for rerolling. Carefully peel off the tortilla and cook on a hot comal or flat cast iron plate, griddle or pan

both the blue bar and the beach cafe, here, have sold nachos for a couple of decades - maybe more - they were the choice of my kids when they were young(er).
the blue bar uses the ones from packets but the beach cafe's ones are much better, either home made or made with fried sections of wrap type tortillas.
the guacamole isn't served as a side but in the dish, with sour cream and chilli.
the blue bar sell a veg option with 'pulled jackfruit' - along with chunky avocado salsa (not quite guacamole - it stands up to the heat).

Yesterday I bought RTC chicken (gluten free) saus. flavoured with Jerk, I shall be interested to see how they turn out.

Catching up, Lusciouslush, would the Umeboshi salty plums be good with cold sliced beef (if that is still around)? Or in a rocket or cress and bell pepper salad with smoked mackerel, with a touch of sweetness in the dressing.

You have just reminded me Sue that I have a Scorpion fish in the DF which does need using. Last time we had this we had it with polenta on an island just off Dubrovnik.

a simple way i used to do a noodle 'small plate' - fry a good amount of finely sliced onions and finely sliced green beans add some soy sauce and the cooked glass noodles. quick and tasty.
