coconut oil
I bought a jar of coconut oil in Lidl yesterday by mistake - I thought I was getting a jar of coconut cream and couldn't believe how inexpensive it was
I know it's quite trendy at the moment.
Are there any recipes you use it for in which it is particularly good?

Not a cooking use but……no laughing at the back, I use it on my skin. Especially if it’s bad with eczema, I go to bed smelling like a Bounty bar but wake up with better, less angry skin.

They may not all be suitable, as I used coconut flour in some recipes, which is quite expensive and can be difficult to work with - it's very absorbent, so recipes need extra liquid. you can't just do a straight swap.
I haven't read through them all to see how many I'd make again, but I can particularly recommend the date and walnut sponge pudding.
Brownies worked well, IIRC, and the pineapple upside down cake. I seem to have just done a straight swap of coconut oil for the same weight of butter for those.

I meant to add - my daughter rubs a little coconut oil round her gums daily, for oral health.

Do what I did when I bought some cheap coconut oil.
Put it on top of the fridge and forget about it!

Ha, Sakk, I've got a bowl of goose fat in the fridge left over from Christmas ... I have no idea how long it'll be good for, as I didn't buy it, it doesn't have any dates on it .... It's covered by a saucer and I haven't inspected it for ages.
Practically the only time we've had roast potatoes since Christmas has been when our veggie son has been here, and so I've used sunflower oil.

I've also got a tin of goose fat with 2015 BBE, and a jar of goose fat that has no date! I remember how hard it was to find before it was popularised by TV cooks, back when duck legs for confiting were £2 for two, so bought it whenever I saw it on offer. They're too expensive now, pity because I love confit duck.

i use coconut oil on my skin, too, and in a face cream i make.
i also use it, sometimes, in a thai style curry to fry off some of the veg and spice paste if i'm using coconut milk anyway.

Suelle, this reminded me of something that I read a while ago about oil pulling. I tried it a couple of times and then gave up!

15 minutes is a long time to hold something in your mouth without swallowing. I remember using a prescribed mouthwash after dental surgery and not even managing 1 minute!
